Tailgate Party Food

 


My sweet cousin Sue is back in Houston at the MD Anderson Center for  round two of cancer treatments and  stem cell replacement. 


She is a trooper though--sweet nature, sweet smile, 



always thinking of others. 

She's beautiful inside and out, 
she loves her Momma fiercely too 
(her Momma is my Momma's twin) 



and she's a pretty awesome cook! 


We're always enjoying sharing recipes.

I have definitely had her on my daily prayer list, 

begging God for her treatment progress and her healing. 

I was struggling with something the other day in my own life and wanted to ask someone for prayers...but getting busy...pushed "me" aside and plunged into the day.

A little later, I got a text from Sue, containing a prayer for me specifically and my day....

of course, I pulled off to the side of the road 
and had a good cry. 

 Someone that has so much on her plate was taking the time to pray for me--unknowingly--and my piddly little issues. 

But God cared and took care of my needs through her. 
God has many angels everywhere!

Her most recent text made me giggle--she had some tests at the hospital and then she and her husband, John visited the Houston Aquarium that afternoon. 



She said she and John rode the train through the shark tunnel , then she rode a seahorse on the carousel and John rode a dolphin.  They had lunch in the Underwater Restaurant and had a Shark Attack ice cream for dessert. 
 


"You know," she said, "just two 62-year olds 
having a normal day." :) 

I love her!!  

I was reminded that day that 
friends are kisses blown to us by angels!! 




  
When the kids were coming over last weekend for lunch, 
Sue asked me to send pictures and food :)  
A Tailgate Party does not have to be hard 
or take much of your time. 

Here's our yummy food below--our quick and easy Tailgate Lunch!  





Sweet Baby Ray's Meatballs

1 small jar of concord grape jelly
1 container Sweet Baby Ray's BBQ Sauce
1 bag frozen Italian Meatballs ( I used Walmart Great Value brand)

Put meatballs in crock-pot.  


In saucepan melt grape jelly and BBQ sauce until smooth. 

Pour over meatballs and cook 6 hours on low. 



Smokie Crescents

1 pkg Little Smokie's Sausage
1 can crescent rolls


Unwrap crescents into flat rectangles.  
Mom pinches the dough off and wraps each sausage.  
We cut our crescent rectangles into little pieces 
and then wrap each sausage.  
Each way produces a great little appetizer!  
Bake 375 degrees 12-14 minutes until brown.  
We usually serve them plain but you can heat some 
honey mustard for a dipping sauce.  

(I love to dip mine in pancake syrup....:)
Just saying...

Buffalo Chicken Crescents


1 large chicken breast, roasted, cooled and chopped small
3 oz cream cheese, at room temperature
1/2 cup Frank's Wing Sauce, divided
1/2 cup Ranch Dressing
1 cup mozzarella cheese

Unwrap crescent roll and flatten into a rectangle 
and press perforations together to seal.  
 

In bowl, stir chicken with 1/4 cup wing sauce.  

 
Mix in cream cheese until all incorporated, set aside.  

In small bowl, stir together Ranch Dressing and 
remaining 1/4 cup wing sauce.  

 

Spread over crescent roll.  



Top with chicken mixture and then 


the 1 cup mozzarella cheese.  


Roll up in jelly-roll form and cut into slices.  


Place on baking sheet and bake 375 degrees 
about 10-12 minutes, until edges are brown.  


Can serve with ranch or Blue cheese dressing for a dipping sauce.

Sausage Crescents

1 roll sausage ( I used Jimmy Dean)
8 oz cream cheese, room temperature
2 cups shredded, Monterrey jack cheese
2 cans crescent rolls


Brown sausage and drain.  
While warm, mix with cream cheese.  
Unwrap 1 crescent roll and flatten into a rectangle 
and press perforations together to seal.  
Spread 1/2 sausage mixture over crescents.  
Top with 1 cup shredded cheese.  
Roll up in jelly-roll form and cut into slices.  
Repeat again with the remaining crescents, 
sausage mixture and 1 cup cheese.  
Place on baking sheet and bake 375 degrees 
about 10-12 minutes, until browning on the edges.  


Cheese Dip



1 large box Velveeta
1- 8 oz cream cheese
1 small jar salsa
1/4 lb ground beef, browned and drained

Place all ingredients into crock pot.   







Cook on low for about 2-3 hours until all smooth and melted.  
You can thin with a little milk if too thick.






Serve with Tostito Scoops.
