Strawberry Heart Pie


 Since February is Heart Health Month,  as well as Valentine's, 
I've added this beautiful Strawberry Heart Pie to my collection.  
The wonderfully delicious Plant City, FL, 
strawberries are ripe and my favorite to bake with.  
This pie is so easy and delicious...
You can add a dollop of whipped cream or Ice cream if you like.  

Strawberry Heart Pie

3-4 cups fresh strawberries, cut into chunks
Pillsbury Pie Crusts-1 box
1/2 cup sugar
1/2 cup water
3 TBSP cornstarch
1 egg yolk
Sugar for top of pie

 In a bowl, pour the sugar over 
the strawberries and gently mix to coat.   

In a medium saucepan, bring the water, cornstarch,
 and strawberries to a boil over medium heat.  
Simmer about 10 minutes.  

Meanwhile, place 1 of the pie crusts in your pie plate.  
Cut out hearts from the other pie crusts 
using a heart shaped cookie cutter.

Let the strawberry filling cool and then pour into the pie shell. 

Place the heart pie crust cut-outs around the pie crust, 
continuing to layer as you reach the middle.  
The middle should look like the cut out 
of a star when you're finished.  

Brush the entire pie with egg wash and sprinkle with sugar. 

Bake at 425 degrees for 20 minutes then reduce the oven 
to 375 degrees and bake for another 
20 – 25 minutes until the filling bubbles.

Dice up your beautiful berries...

In a large bowl coat them with the sugar...

In a saucepan, mix the water with the cornstarch 
until the cornstarch dissolves...

Add the strawberries and simmer about 10 minutes...

Pour into another bowl and cool in the refrigerator...



When cool, pour into your pie shell...



Cut out your hearts from the other pie crust...



Layer them starting from the outside 
and completing toward the center...



Brush completely with egg yolk and sprinkle with sugar...



Bake at 425 degrees for 20 minutes, 
reduce to 375 and bake another 20 minutes.
