Mango Quinoa Salad




When I got to work on Friday, 
the management team was giving out treats.  

We got an apple, a banana and a cupcake...

See what I brought home??
 So you know which one I ate???

Exactly!

I did only eat half of the cupcake 
and disposed of the other half, 

but that's beside the point...

So, my friends, we shall begin the week anew 
with Healthy Recipe Monday! 

This Mango Quinoa Salad is delicious and filling 
with a touch of salty and sweet.  

You can make it and enjoy it all week long.

Mango Quinoa Salad

1 cup quinoa, prepare as per directions on 
1 diced fresh mango
1/2 cup green onions, diced
1 medium to large red pepper, diced or 
a few small ones like I had on hand
1 small bunch cilantro, chopped 
1/2 cup coconut, toasted
 1 cup sunflower seeds, toasted
1 cup craisins 
Juice of 2 limes
3  Tbsp Balsamic Vinegar

Cook quinoa as directed and cool completely. 
 Add all other ingredients and toss.
Enjoy cold!!

The healthy ingredients:


Slice and dice your peppers...

Add the chopped cilantro...

 

Chop the green onions...

Ok, we all know I have an issue with trying to toast things and then I end up burning them...

I was determined NOT to do this tonight 
to the sunflower seeds...

I was standing by the oven...
patiently..I might add...

Really concentrating on NOT burning the sunflower seeds...

Then "squirrel"...

I remembered I needed something 
from the other room...
came back and the seeds were extra toasted 
if you know what I mean...

Anyway, this was the second pan...

It turned out great, but the picture did not...

I have issues...

Just saying...


Peel that beautiful mango...


Dice it up...


Add it to the salad bowl....

I think this picture is upside down...

Really???

Sigh...


Pour in the Craisins...


Slice those beautiful limes...


Squeeze them into the bowl...


Add the balsamic vinegar next...


Toast that beautiful coconut---

if you don't like coconut, you can leave it out...
(but if you don't like it, what's wrong with you???) :)

the salad will still be great...
I promise...


I did not leave the oven's side and 

 I was successful with the coconut...


Add the toasted, cooled, sunflower seeds....


And the cooled quinoa...


The toasted coconut next...


Toss well and enjoy!   So very yummy!
