Bob--The Tortilla Thing--An Appetizer Adventure

 


We love watching Diner's Drive In's and Dives! 
What a dream job visiting all those out of the way places 
to eat and being able to taste all that good food!  

I have always loved to do that when we travel--
those little "hole in the wall" diners 
always have the very best dishes :) 
 
One night recently, we only caught the middle of an episode.  
The appetizer they featured in a little restaurant 
was a recipe I have never come across.  

It sounds REALLY REALLY WEIRD...
but everyone eating it was just raving about it.  

I don't even know the name of it and for weeks 
I have been referring to it as "the tortilla thing"...

I asked that handsome mechanic what 
we should call it and he said, 

"Well, we could just call it  "Bob"....

Yeah, he wasn't much help on this one....

Anyway, I'm gonna share and see what you think.  
Trust me, Mom and Guy Fieri--- it is absolutely delicious!  :)

Bob--The Tortilla Thing
6 flour tortillas
4 onions
1 stick butter
1 TBSP olive oil
1/4 cup sugar
1/8 cup balsamic vinegar
1/2 cup mayo
1/2 cup chopped cilantro

Slice the onions into thin rounds.  
Melt 1 stick of butter and add 1 TBSP olive oil.  

Add the onions and cook low and slow 
until the onions are lightly brown.  

Add the sugar and keep cooking until  
the onions are a caramel brown color.  

When done, add onions to a bowl and add the remaining ingredients and blend until a smooth sauce is obtained.  

Take the tortillas and spread the sauce between each layer.  
You should have a little sauce left over to serve as a dipping sauce. 

 When you have the stack completed, 
wrap in saran wrap and put in the refrigerator overnight.  

The next day, cut the tortilla into 8 triangles 
with a pizza cutter or sharp knife.

Sear in frying pan on each side in about 2-3 TBSP of olive oil.  Then place on pizza pan and bake in 
a 400 degree oven about 8-10 minutes. 

Serve with the remaining sauce for dipping.  


The awesome ingredients...

Place your stick of butter in your frying pan 

and melt it over medium heat...


Slice the onions into rings...


Throw them in the pan...


You will now become "one" with the onions 

and devote your utmost attention to them...


Cooking and turning...cooking and turning...


Add the 1/4 cup sugar...


They will begin to brown...


And become a little darker...


and darker...


You'll remove them with a slotted spoon 

and place them in a mixing bowl...

Add the balsamic vinegar...


the chopped cilantro...


the mayo...


I used my hand blender to blend well...

you can use a standard blender or food processor...

whatever tool does the job of making 

a puree' out of the ingredients...


It will look like this...


You will spread some of the sauce on each of the 5 tortillas...


Until you have a stack like this...and top with the 6th tortilla...


Wrap "Bob" up in clear wrap...


Save some of the sauce for dipping later...


The next day when you unwrap "Bob", he will look like this...

Not much change, you say...

It's ok...

Trust me...

This waiting overnight will be worth the anticipation...


Cut into 8 slices with your pizza cutter...


Look at those tiny layers filled with goodness...


Next, sear each triangle in a little olive oil....


The outside will be brown and crispy...


Place them on a baking sheet and 
bake on 400 degrees about 8 - 10 minutes...


Serve with a side of the sauce for dipping...

It is a most wonderful unique appetizer!!!
