Fried Pies and Fireflies Chicken Jambalaya





Sharing one of my oldest and most favorite recipes today....
my easy Chicken Jambalaya!  

This one has always been one of Jessica's favorites :)  

You can make it in a snap and it feeds a small army...
but if you're lucky enough to have left-overs, the taste just gets better and better as the flavors meld together...yum!  

I add just enough Cajun seasoning to make it a little interesting, 
but if you can add more to your liking.  

I love the andouille sausage...it gives it a great Louisiana flavor, 
but I have also used Hillshire in a pinch.

Grab those ingredients and get ready to wow the family tonight :)


Fried Pies and Fireflies Chicken Jambalaya 

2 medium onions, chopped

5 stalks of celery, chopped

1 large green bell pepper, chopped

1 qt chicken broth

1/2 pound of andouille sausage 

1 cup Jasmine rice

2 TBSP Slap Ya Mama Seasoning or  
Cajun seasoning of your choice...

have used Tony Chachere's  for years... 

1 rotisserie chicken...or you can roast your own...
but this is too easy!!

Chop your veggies.  
In large pan, add a couple of TBSP's of olive oil 
and 3 TBSP butter.  Saute' the veggies until soft.  

Cut up the sausage into small pieces.  
Add the sausage to the veggies, cover with a lid, 
turn the temperature down a bit and let simmer.  

Meanwhile, deconstruct the chicken into small pieces ...
discarding the skin and the bones.  

Add the chicken to the veggie/sausage mixture 
and the broth in next.  

Bring it to a boil and add the cup of rice and the seasoning.  
Turn the heat down and simmer for 25 minutes to cook the rice.  

Enjoy!!

 Add the oil and butter to your pan...

while that's sauteing...prepare the sausage...
 

I cut my sausage up in little pieces...
I'm not fond of big hunky pieces in my recipes...

I'm a little weird...just go with it ok...
you can cut yours to any size of your liking...

just don't tell me about it... :)
 

add it to the veggies...

Deconstruct that chicken next....

Toss in that wonderful seasoning in next...

Pour in the chicken stock and bring to a boil...
 

Wowzers!! 

add the rice...


Put the lid on and simmer for 25 minutes...

Uncover and serve!!!
