Sparkling Apple Cider Pound Cake



 I can almost feel fall...can't you?  
It's definitely my favorite time of year.  

Hope you'll enjoy this delicious pound cake made with 
one of my favorite fall beverages. 






 Sparkling Apple Cider Pound Cake

1/2 cup butter, softened
1/4 cup Crisco shortening
1 1/2 cups sugar
2 eggs
1/2 tsp butter extract
1/4 tsp salt
1/4 tsp baking powder
1 1/2 cups cake flour
1/2 cup Sparkling Apple Cider

Glaze
1 1/2 cups powdered sugar
1/4 cup Sparkling Apple Cider

Cream butter, Crisco and sugar.  

Beat in eggs one at a time along with the butter extract.  

In a small bowl, combine the dry ingredients 

and stir to combine.  

Add this alternately with the 1/2 cup sparkling cider 

and beat until well incorporated. 

Pour into a greased and floured 9x5 loaf pan.  

Bake at 350 degrees for about 50 minutes, until the top is brown and a toothpick is tested clean when inserted. 

Let cool in the pan for 5-10 minutes 

and then transfer to a cooling rack.  

In a medium bowl, whisk the cider 

and powdered sugar until smooth.  

Pour over cooled cake.

This one is our favorite! 


You can use the regular vanilla flavoring in this recipe, 
but I'm going to try this new Butter Vanilla flavoring 
I found this week...

It was in the baking aisle in Walmart 
where all the Wilton products are...:)


Cream your butter, shortening and sugar...
add the eggs and vanilla...


Mix it up really really good...
and add the dry ingredients...


Add the sparkling cider...



Yes, I did lick the beater...
I do believe it's part of my job description...

Yum!

Bake it in your loaf pan for 50 minutes at 350 degrees...
It will be perfect like this...


Make your glaze with the confectioner's sugar and cider...


Pour over the cake...

Delicious!
