Spanish Rice Bake

Spanish Rice a Roni is one of our versatile favorites...
I usually cook it according to the package 
and add hamburger meat.  
I changed it up a bit tonight with more Mexican flare 
adding Rotel, olives and shredded cheese...
delicious! 




Spanish Rice Bake

1 lb hamburger meat, cooked and drained
1 small onion, chopped
1 pkg Rice A Roni Spanish Rice
1 can Rotel Tomatoes
1 small can sliced olives, drained
Salt & Pepper to taste or 1 tsp Morton's Nature Seasoning

Chop the onion and cook with the pound of hamburger meat.  When done, drain and set aside.

Cook the Rice a Roni according to package directions 
and add the Rotel instead of the diced tomatoes that it calls for.  Simmer 15-20 minutes until done.  

Pour in the hamburger meat and add the olives; 
stir until combined.  
Stir in 1/2 cup shredded cheddar cheese 
and 1/2 cup mozzarella cheese.  

Pour into baking dish and top with remaining 1/2 cup cheese each.  Cover loosely with foil and bake 350 degrees until hot and bubbly. 

You can add toppings of your choice such as sour cream, 
cilantro, tomatoes and more olives if you wish.

Cook the Rice A Roni according to the directions...


When done, add the cooked hamburger meat/onion mixture...


Stir in 1/2 cup each of the cheeses and the olives...



Place in baking dish, add the remaining cheese...



cover loosely with foil...
and then bake 350 degrees about 30 minutes....
When it ends up on your plate, it will look most wonderful like this!
