What is better than grits?
Shrimp & Grits of course!
This recipe made a wonderful hearty meal...

New Orleans Shrimp & Grits
3 cups water
3 1/2 cups half and half
5 oz shredded Parmesan Cheese
1 egg, lightly beaten
1 tsp salt
1/4 tsp cayenne
12 oz pkg bacon, cooked and broken into small pieces
2 TBSP of the bacon grease
1 cup sliced green onion
1/4 cup all purpose flour
1 cup chicken broth
2 cups heavy whipping cream
2 LBS shrimp, peeled and deveined--or,
if you grocery store has a seafood market,
have them steam 2 lbs for you with Creole Seasoning
3/4 tsp Creole Seasoning
Preheat oven to 350 degrees.
Lightly grease 13 x 9 pan.
In large saucepan, bring water and half an half to a boil.
Add the grits, reduce the heat and simmer
5-7 minutes, stirring constantly.
Stir in cheese, beaten egg, salt and pepper.
Pour the grits into the baking dish and bake 30 minutes.
In a large skillet, add the bacon grease and flour
and cook for 2 minutes, stirring constantly.
Add the broth and cream, stirring until combined.
Cook for 5 minutes on low until thickened.
Add the bacon and the green onion.
Add the shrimp and cook for 3-4 minutes until
the shrimp are pink and firm;
if you're using precooked shrimp, add and simmer
until they are warm through.
Add the Creole Seasoning and stir.
Spoon the shrimp mixture over the grits in the baking dish.
Serve immediately.

Remember to stir, stir, stir...
Stir in the cheese...
The beaten egg and spices...
Pour them in the 9 x 13 pan and bake
on 350 degrees for 30 minutes...
Add the bacon and green onion...
Add the shrimp...yum!
Spoon it over the baked grits...
add a little more green onion garnish and serve immediately...
