Beautiful Girls: Paige, Jessica, Amy & Granny
Have I told you about my Paige? She is my son Daniel's girlfriend and I believe they have been dating for 5 years or more now. (Not counting the few months of bad judgement that my son had a couple of years ago :)
Paige is beautiful, smart, funny and she loves my son so very much---and for that alone I thank her. I have always prayed for good partners for my children and they all have done splendidly in that department!
Paige will graduate with her four year degree this May and then will pursue her masters.
She works with the Students for Diabetes at her college, she holds down a part-time job,
she keeps their home just beautiful, she does Zumba to keep healthy, she bakes and cooks yummy vegan recipes, and she has adopted a rescue dog she is training for diabetes purposes. Whew! She exhausts me!
I am so proud of her and her accomplishments!
Paige is also one of the most thoughtful people I have ever met. About a month ago, I was cleaning out my files and I came across many things that Paige has written to me and has made for me over these past 5 years. They are always very touching, and, of course, makes me cry, because I know she has put her whole heart into each treasure.
Then, this Christmas, she topped herself. She gave me this beautiful canvas she made with all our names intertwined.
Just beautiful and oh, so meaningful to me because these are the ones in my life that are the threads of my heart.
Thank you again Paige...you are most wonderful to me! I hope you have the most wonderful of Birthday's today!
Cherry Cobbler Muffins
1 Can Cherry Pie Filling
1 Tsp. Lemon Juice
1/2 Tsp. Almond Extract
1 1/2 Cups Cake Flour
1/3 Cup Sugar
1 1/2 Tsp. Baking Powder
1/2 Tsp. Soda
1/4 Tsp. Salt
1/2 Tsp. Cinnamon
1 Egg
2 Tbsp. Butter, Melted
1 1/4 Cups Buttermilk
Cinnamon Sugar
Directions
Separate one cup cherries from pie filling.
Add lemon juice and almond extract.
Set aside.

Mix together flour, sugar, baking powder, soda, salt and cinnamon.
In another bowl, whisk egg with melted butter and buttermilk.
Add to dry ingredients, mixing together lightly.
Fill muffin cups one-half full.
Drop two cherries into each muffin cup,
Sprinkle tops with cinnamon sugar and bake until lightly browned.
