Have you been thoroughly enjoying the excellent
spring weather we've been blessed with?
I just love this time of year right before it gets
way too hot for my taste!
I've been enjoying walking, sitting in the sun,
watching my beautiful roses bloom,
taking Kaia to the beach
eating ice cream...
and riding in the convertible with the top down
with the wind blowing all the daily cares away :)
I appreciate all the great comments on my blog and
my recipes I've been sharing.

Today I'm sharing my recipe for my Smoky Roast.
It's so very delicious and again can be waiting for you
when you come home from work.
My family has enjoyed it for years and I hope you'll
add it to your collection.

The Lovely Cast of Characters
3-5 lbs beef roast
1 Tbsp garlic salt
1 tsp pepper
1 Tbsp celery salt
2 Tbsp liquid smoke
Mix all spices together....
and rub into the roast.
Pour liquid smoke over roast.
Yummmmmm........
Next..you must cover roasting pan with heavy duty foil...you don't have to have the heavy duty foil with the alligator on the box
but it would probably be best if you do...just saying.. :)
Cover it very tightly to keep all the heat and
steam in while it cooks.
Cook on 250 degrees 6-7 hours.
Take it out of the oven and remove foil...
(if you come home after work at 1 am like me...you will forget to take a picture of the cooked whole roast..
because you're so excited to shread it and eat it...sigh...
This is what is looks like in it's delicious shredded state!
It's great paired with mashed potatoes and carrots.
The au jus it makes is great to make homemade gravy with.
It's also wonderful with barbecue sauce for sandwiches.
So many many wonderful options!
