Lisa's Meatloaf



This kitty cat knows how to fully enjoy a fireplace! 






I hope you'll enjoy curling up today in front of a warm fire

or under a cozy blanket...

 with your fuzzy socks....

surrounded by fluffy pillows...
 
sigh...

I digress...

and enjoy a yummy comfort meal of home-cooked meatloaf.  

My oldest "shared son", Jack Waldroup :),  
asked for my recipe the other day 
and I told him it only made me want to cook one...quick!

He's my only "child" that likes meatloaf...bless you, Jack!   

So today, I'm sharing my favorite recipe...I hope you enjoy!

Lisa's Favorite Meatloaf

1 lb ground beef

1 green pepper, chopped

1 onion, chopped

1/2 stick of butter

1 can Hunt's Tomato Sauce for Meatloaf--  
or 1 can plain tomato sauce and 1 small can tomato paste
   
2 1/4 cups bread crumbs

1/2 c Ketchup 

 
In a large bowl, add the ground beef, eggs, 
tomato sauce and bread crumbs.  


Saute' the onion and green pepper in the 1/2 stick of butter 
until vegetables are soft.   

Drain the vegetables and add to the meat mixture. 

Mix all ingredients well. 
Place in loaf pan and add the ketchup on top.   

Bake 375 degrees for 45-50 minutes.

I love this stuff!!!


Meanwhile, Momma says the onions and peppers 
are better in the meatloaf 
if we saute' them in the butter...so that's what we're gonna do :)


Drain them and add them to the meat mixture....

Next, I'm gonna get my pan ready...
I absolutely love my meatloaf pan I got from Wilton 
about a decade ago!  
It's wonderful and the grease drains into the pan underneath...
pure genius, I must say!  :)


Pack all that goodness in there...


Add the ketchup decoratively on top and bake 375 degrees 
for 45-50 minutes.
