Blueberry Buckle



The summer blueberries have been absolutely delicious!  Grab some today and make this wonderful berry creation 
that can be enjoyed at breakfast or as a yummy dessert. 




 BLUEBERRY BUCKLE
 
1/4 c. butter softened
1/4 c. sugar
1 egg
1 1/2 cup cake flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 cup fresh blueberries 


Cream together the butter and 1/4 c. sugar. 

Add egg next and mix well.  

In another bowl sift together flour, baking powder and salt. Add flour mixture alternating with milk. 
Gently fold in blueberries. 
Pour into greased 8 x 8 square pan.
Sprinkle with crumb topping and bake at 375 degrees for 40-45 minutes.

  CRUMB TOPPING
1/2 c. granulated sugar
1/3 c. flour
1/2 tsp cinnamon
1/4 c. butter, cold


In a small bowl mix together sugar, flour and cinnamon. 
With a pastry blender cut the butter into sugar mixture 
until mixture resembles coarse meal.
Sprinkle on the blueberry mixture and bake as directed.  






The delicious ingredients...


Cream together the butter and the sugar...
Add the egg next...


Alternate adding the flour mixture with the milk...


Gently fold in those amazing blueberries...


Spread in the 8 x 8 baking pan...


Place your topping ingredients in a bowl...


Cut the butter in with a pastry cutter...


Sprinkle the topping over the blueberry batter...


Bake at 375 degrees for 40-45 minutes...
