The strawberries from Plant City, FL have been so good this year! When I was a little girl and we lived in Tampa,
one of my earliest memories was of my niece Dana and me
picking strawberries with our Moms in the fields of Plant City.
We would be covered in dirt when we were through
but we'd be full of berries!
These cupcakes have a touch of those strawberries and along with the other easy ingredients, turned out so very delicious!

Strawberry Cupcakes with Whipped Cream Cheese Icing
1 cup butter, softened
1/2 cup sugar
4 eggs
1 pkg white cake mix
1 small package strawberry jello
1/2 cup milk
1/2 cup finely chopped fresh strawberries
1/3 cup cake flour
Whip butter until light and fluffy about 3 minutes.
Slowly add the sugar beating well.
Add the eggs one at a time.
Add the cake mix, jello and milk. Mix until combined.
Toss the strawberries with the cake flour
and gently stir to the cake mixture.
Fill the cupcake liners 2/3 full.
Bake 350 degrees for about 18-20 minutes.
Cool completely on wire rack before frosting.
Whipped Cream Cheese Frosting
1 (8 ounce) package cream cheese, at room temperature
1 cup sugar
1/8 tsp salt
1 tsp vanilla extract
1 1/2 cups heavy whipping cream
In a small bowl beat whipping cream
until stiff peaks form; set
aside.
In a large bowl combine cream cheese,
sugar, salt and vanilla.

Whip the butter till creamy and add the sugar...
Add the eggs...
the cake mix, jello and milk...
Doesn't this just make you want to lick the beaters??

To the diced strawberries, add the cake flour...
Gently stir with your hands...
Fold the strawberries into the batter...
Pour in your cupcake holders...
Bake at 350 degrees 18-20 minutes until they test done...
Frost with the amazing icing and enjoy!
