For years I have been cooking my pasta
separate from the sauce...Haven't you?
Try this life-changing way of cooking everything
in one pan for a quick and easy dinner...
Pasta may never be the same again! :)
Easy Chicken & Alfredo Pasta
3 TBSP Olive Oil
1 1/2 pounds of boneless, skinless chicken breasts
cut into 1 " pieces
2 cloves garlic, minced
2 cups chicken broth
1 cup heavy whipping cream
4 oz cream cheese or Mascarpone cheese
4 oz cream cheese or Mascarpone cheese
1/2 lb penne pasta, uncooked
2 cups shredded Parmesan cheese
salt & pepper
Season the cubed chicken with salt & pepper.
Brown the chicken in olive oil over medium heat.
It does not have to be cooked through,
because it will continue to cook as it simmers.
Add the minced garlic and saute for a minute.
Add chicken broth, cream, cream cheese or
Mascarpone cheese and uncooked pasta to pan and stir.
Bring to a boil, cover and reduce to a simmer.
Simmer for 15-20 minutes until pasta is tender.
Remove from heat and stir in shredded Parmesan cheese.
Season to taste with salt and pepper.

The one-pan ingredients...
Cut up the chicken...season it with salt and pepper...
Saute' it in the olive oil...
Add the garlic...
then the chicken broth...
the heavy cream...
the uncooked pasta...
and bring to a boil...reduce heat to low...cover and simmer 15-20 minutes...
then remove from heat and add the Parmesan cheese...
the Mascarpone cheese...
and stir until creamy like this!

Momma's Fried Potato Cakes
When we have left-over mashed potatoes,
Momma loves to make fried potato cakes.
She take the potatoes..usually about 2 cups...
and adds 2 eggs, 1/2 cup milk and 1 TBSP of flour...
She then drops a good large spoonful into hot grease
and fries them until golden brown...
So very yummy!!
You can make some additions to the batter such as:
diced onions, green onions,
cooked crumbled bacon,
shredded cheese....
the possibilities could be endless!
Mix your batter and drop the patties into the hot grease...
Turn them as they brown on one side...
My sweet Momma! :)

You'll want to drain them on a wire rack or on paper towels...
