Sharing another star recipe to add to your football day recipes!
We had a "tailgate" theme at our meeting at work this week
and these sandwiches were nothing short of a touchdown!

Tailgating Short Rib Po' Boys
5 lbs beef short ribs, cut into large cubes
1 cup red wine
1/2 cup diced celery
1 small onion, diced
1 can French Onion Soup
1 pkg Malibu Seasoning Mix--I get this at Publix
or just salt & pepper to taste
1 pkg Malibu Seasoning Mix--I get this at Publix
or just salt & pepper to taste
Start by brining your beef short ribs
in the red wine, seasoning and soup
overnight.
Remove from the marinade and pat dry.
On a hot grill, sear
the pieces of beef on each side until browned.
In a slow cooker or Dutch
oven, place beef, vegetables
and beef broth and cook slowly at 300
degrees for 5 hours.
For the Po’ Boys
Braised Beef Short Ribs
French bread
mustard
Shredded lettuce
Assemble the po’ boys with a slathering of creole mustard
inside the
bread, fill with beef and top with shredded lettuce.

The delicious team players...
(also..ignore the bowl with the onions and celery...not included!)
I put the short ribs in a ziploc bag and added the Malibu seasoning...
French onion soup...
and the burgundy wine...
I refrigerated them in this bag overnight...
The next morning, I drained them...
Then seared them on the grill...
You can just do this in a large frying pan if you need to...
I put them in the crockpot (with no additional liquid)
and cooked them all day at work...
from 8am until 3:30 on low...
The ribs were very shred-able when I checked at this point...
I bought these delicious little potato rolls...
added some spicy brown mustard...
and made these most delicious sandwiches for our party!
Our team has some amazing cooks!

They're always eager to play the "clean-up" position :)
