Grilled Fish with Watermelon Salsa


I've never made Watermelon Salsa before 
but that's all changed now!  
This was delicious and just the right sweet/hot flavor 
to enjoy with the grilled fish...
it's a great addition to my recipe collection. 



Grilled Fish with Watermelon  Salsa

4 fresh fish fillets of your choice, I used tilapia
Lemon Dill Seasoning
 Morton's Nature Seasoning
1/2 cup melted butter
1/2 cup fresh lime juice 

Combine 1/2 stick melted butter and 1/2 cup lime juice.  
Pour over fish.  
Sprinkle each piece with Lemon Dill Seasoning 
and Morton's Nature Seasons.
Place fish on hot grill and cook 3-4 minutes 
on each side until done.

Watermelon Salsa

2 cups seedless watermelon, diced small

1/2 cup diced cucumber

1/4 cup red bell pepper, diced

1/4 cup fresh cilantro, chopped

1/4 cup chopped onion, red if you have it

1 jalapeno pepper, chopped and seeded or 
1 TBSP jar jalapenos, chopped

1 TBSP lime juice

 2 TBSP honey


Combine all ingredients and toss lightly.
Chill and serve.   

 Serve fish on a bed of Wild Rice along with the Watermelon Salsa

 Chop the watermelon very small...

Do the same with the cucumber...

Add the cilantro, chopped red pepper, 
chopped onion and jalapeno...


the lime juice...


the honey...
Mix gently and chill while you're preparing the fish...


The lime, melted butter, lemon dill seasoning and fish...
ready for action...


Pour the butter over the fish and sprinkle generously with the Lemon Dill and Morton's Nature Seasons...
Grill the fish on a hot grill 3-4 minutes on each side until done...



Serve with Wild Rice and the Watermelon Salsa...
Delish!
