Joyce's Spinach Ball Appetizers



Well, my friend, Joyce, has done it again!  
She is just a wealth of amazing recipes that I 
have never even heard of.  
These Spinach Appetizers are delicious hot....are amazing cold...
and they can be baked and frozen to be served later.  
I bet you can't eat just one! 
Joyce's Spinach Ball Appetizers

6 large eggs
1 1/2 sticks butter, melted
6 oz Stove Top Stuffing Mix, chicken flavor
1 pkg frozen, chopped spinach, thawed and drained well
6 oz shredded Parmesan cheese
1/2 tsp Morton Nature's Seasons

Preheat the oven to 350 degrees. 
Place the eggs in a large bowl and beat with a whisk 
until they are smooth and lemon colored.  

Add the melted, butter, stuffing, spinach, cheese and seasoning.  Mix well to combine.  
Using a small scoop, roll each scoop into a ball about 1" in size.  You will end up with about 48.  
The mixture will be a little loose but it will firm up in the oven. 

Place them on baking sheets and cook about 
13 minutes until slightly brown.  

Cool slight then transfer to a serving platter and enjoy!

Freezing Instructions:
Place the baked balls on a flat platter and freeze about 1 hour.  
Transfer them to a freezer bag; they will keep 2 months this way.

I used my handy dandy dough hook to combine it all...

 




I used my scoop and made them perfectly un-perfect like this!





 After baking for about 13 minutes...your have these yummy appetizers! 


 Put them on a pretty serving platter and wow your guests!
