Amy, Granny and I began visiting one of the local
Pumpkin Patch's when Kaia was just about 3 months old.
We
thoroughly enjoy the beautiful pictures Amy takes there--
she is not only a wondermous
daughter-in-law, wife and mommy,
but an extraordinary photographer as well!

You must visit her website at AmyPinneyphotography.com
and view her incredible work!
Anyway, when we were at the Pumpkin Patch last year,
Amy was expecting Noah and we talked about
how exciting it would be in 2012 when he would
join us for the annual Pumpkin Patch pictures.
In the past few weeks, we would mention from time to time
that picture time was almost upon us....
We were almost giddy with excitement....sheesh...
Well, things just didn't go as perfectly planned...
Noah was not impressed with the ride to the pumpkin patch....
His sister must have told him on your first trip,
you must scream all the way there....
just saying...
you must scream all the way there....
just saying...
Behind the scenes looked like this a lot....
He was not impressed with the pumpkins at all...just saying...
He only wanted Mommy to hold him....
while she was trying to take
pictures...
on her phone....
because she forgot her camera....
sigh...
Anyway...it wasn't the perfect event we imagined it to be,
but as I told Amy, it was memorable!
And she did work her photography magic (even on her phone)
and managed to get some great memories for us.
What a cutie!!
What a beauty!
We then brought Ice Cream Sundaes home...
And french fries....
And everything was right with the world ...
So thankful for the lesson that making sweet, sweet memories doesn't necessarily have to follow our scripting... :)

Sharing my first attempt at my
Puff Chicken Tacos...
mucho delicious!!
Puff Chicken Tacos
1 lb chicken breast strips
1 pkg dry ranch dressing mix
1 pkg taco seasoning
flour tortillas
toppings of your choice--sour cream, lettuce, chopped tomatoes, shredded cheese, sliced olives, salsa
1 pkg dry ranch dressing mix
1 pkg taco seasoning
flour tortillas
toppings of your choice--sour cream, lettuce, chopped tomatoes, shredded cheese, sliced olives, salsa
Before you go to work,
throw those chicken strips in the crock pot...
Add the ranch dressing mix...
And the taco seasoning...
Put the lid on and cook on low about 8 hours...
You'll then take it out of the crock pot and shred it....
Mmmmm....smells wonderful!
Put some in a tortilla and fold it over...
Daniel..shield your eyes....
Next drop it in your deep fryer for a few minutes
until the tortilla puffs up and is a little crispy....
Drain a little and add all the glorious toppings....
So pretty!!
Of course (Daniel)...you don't have to fry it....
You can just put that yummy chicken in the tortilla
and add the toppings...
But you can't call it a Puff Chicken Taco if you do :)
