Love from the South






Hee!  Hee!  

I shared my Red Velvet Cheesecake Cake 
with my co-workers this week.  
 I made one for my son's co-workers as well. 
Whew!  Those babies weigh 3 1/2 lbs each!

 A sweet young lady I work with and I shared memories 
of our mothers and grandmother's cooking.  
We wish we had more handwritten recipes passed on to us 
and I told her that's why I have found it so important 
to document mine for my children and grandchildren.  

Well, both cakes were devoured immediately and very happily :)  

I said, "You know, I cannot imagine how many calories 
must be in just one  slice."
My sweet friend just looked at me and said, 
"Ms. Lisa, it just doesn't matter....it just doesn't matter."

In the South, we love everyone we love with good food...
we just can't help it! 



This week...the crazy countdown before Christmas week...
I'm going to post some quick and easy recipes.  
These have helped me in a pinch...especially working full-time....and needing to carry something to holiday parties 
or just for some quick and easy meals 
and sides for the holiday company!  

I hope everyone has a special time and is blessed 
to enjoy the love of family and friends! 






Holiday Fruit Dip

1 jar marshmallow cream
2 8 oz cool whip
8 oz cream cheese

If you have Maraschino cherries, you can add 
some of the juice to make it a Christmasy color!  

Sadly, I did not have any at the time of this recipe :(  
Sigh...I love them... 

 
Blend the cream cheese and marshmallow cream until smooth.  Add the cool whip until all combined well.  
Add some cherry juice if you wish to add color.  
Enjoy with any fruit of your choice!  



The yummy ingredients: 


Throw the cream cheese in the mixing bowl...



Wowwzers!  I could just eat this right out of the jar with 
a spoon...
my fingers...
a stick...
you know...
whatever it takes...

But...we must stay strong and add this to the cream cheese next...



Mmmmm...



Blend until smooth and creamy like this...




Add the cool whip next and combine well.....



Place it in a pretty serving bowl and 
serve with fruit of your choice!!  

I especially love it with strawberries!
