Frog's Eye Salad







I can't believe it's been a year since we were blessed 
with this little guy!  



 He's always loved the outdoors with his Granny--just like Christopher did...

(Look at those "manly" thighs!  :)



 Got to spend some birthday time at the park 
with this sweet boy today...


He just melts Grandma's heart!

Since Noah is one of my number one fans of 
Grandma's cooking and it's his birthday, 
I thought I'd share one of my favorite salads today.   

It's a little different since it has tiny pasta in the ingredients but it's so very delicious!  I hope you enjoy! 


Frog's Eye Salad

1 (16 oz.) box acini-de-pepe 
1(11 oz.) can mandarin oranges
1 cup miniature marshmallows
1 (15 1/4 oz.) can crushed pineapple
1 c. sugar 
2 eggs, beaten
1/2 tsp. salt
1 container Cool Whip
Boil acini-de-pepe in salted water until tender. 
Rinse in cold water and drain. 
Drain pineapple. 
Reserve 1 3/4 cups juice. (If there was not enough, you can add enough water to make up the difference.)
Put juice in saucepan, add sugar, eggs, dash of salt. 
Cook and stir until thick. 
Put in a bowl, cover and refrigerate until completely cool.
When cool, stir in pasta. 
Add pineapple, whipped topping, mandarin oranges, 
and marshmallows. 
The yummy ingredients...
 

Drain the pineapple but reserve the juice....
you will need this for the sauce....
 

 In your saucepan, add the sugar and the reserved pineapple juice...

Add the flour... 


The salt...

The pineapple juice...


Whisk the eggs and add to the pineapple juice mixture...
 

Have patience while it cooks and stir, stir, stir...
 

It is ready when it gets thick and creamy like this...

Put it in a bowl and refrigerate until completely cool...

Drain the mandarin oranges...
 

Cook and drain the tiny pasta...


When the pineapple mixture is cool, add to the pasta...


Next add the pineapple and mandarin oranges...

The marshmallows...

Fold gently....

 Next add the creamy, dreamy cool whip...

Yum!!   


So pretty served in individual dessert glasses 
and topped with a mandarin orange...
 (or you can top with a Marachino cherry...
if you didn't eat them all like I did...sigh...)
