To Infinity & Beyond...Roasted Red Potato Pizza








When my Daniel was here for Christmas, we visited 
one of our favorite pizza restaurants that we always 
seem to forget about until he's at home.  

We love to go there with him because he makes us try such wonderful creations that we would never otherwise order! 
He has taught us that there is a whole world beyon
pepperoni & mushrooms!  Incredible I know!  

Tonight,  I'm trying to recreate the most delicious pizza
we had there that day-- Roasted Potato Pizza.  

Yes, I know, I was doubtful too, but no more--no siree...

It was just amazing!  
We experimented tonight and the pizza below 
is what we came up with.   

Of course, if you have a favorite pizza dough, you can use that.  
I bought one in Fresh Market today already made, 
because I had a doctor's appointment and 
I knew I wanted to make it easy on my myself--
cause I'd be whiny after my injection, 
just saying...I know myself well...

We hope you enjoy it as much as we did!

Roasted Potato Pizza
                    
                     1 pizza crust                      
1 large onions
1/2 cup butter, divided
1 t. sugar
2 cups thinly slices Red potatoes
1 pkg roasted potato seasoning--you can find this 
with the potatoes in the produce section
3 cloves garlic, chopped or pressed
1/2 cup Parmesan cheese
1 cup shredded Mexican cheese
1 cup shredded Mozzarella cheese

For the Caramelized Onions:
Cut onions in half, from top to bottom, then slice.
Melt 3 tablespoons of the butter in a medium sized pan over medium heat.  When butter has melted, add onions.  
Sprinkle with 1 teaspoon of sugar.  
Cook the onions over medium-low heat until onions are golden. 

For the Potatoes:
Slice potatoes, very thin, keeping the skins on. 
In a small pan, melt 2 tablespoons of butter.  
Add potatoes, and 2 TBSP of the roasted potato seasoning. 

Saute these for about 10 minutes on medium heat, 
stirring occasionally to allow the potatoes to get 
slightly browned on all sides.

You want the potatoes to be cooked all the way, but not too soft.  Remove from heat, and use pan for the butter sauce.

Butter Sauce:
Using the same pan you used for the potatoes (this will help to soak up some of the savory flavors from the potatoes), 
melt the remaining 3 tablespoons of butter.  
Add the chopped garlic and saute over low heat 
for about 5-7 minutes.

To Assemble:
Place your pizza dough on the baking pan.  
Top with butter/garlic sauce. 
Place onions and potatoes evenly over entire pizza.  
Sprinkle with the cheeses over the entire pizza.  
Bake in a 450 oven for 15-20 minutes, or until cheese 
is slightly browned and crust is done.

Slice the onions so that they will be in long strips...



Slice the potatoes leaving the beautiful skin on...

 

Look at these dueling frying pans...look at that butter...this is going to be GREAT!

Melt the butter and saute' the onions in one of the pans...Add a TBSP of sugar...

 

 In the second pan, melt the butter and add the potatoes and saute' until done but not too soft...you know...just right...



You can certainly season the potatoes with what you have on hand, but I picked this up by the potatoes in the produce section--it was just there saying--"Pick Me!"--truly it was...


Sprinkle about 2 TBSP over the potatoes and save the rest for another yummy recipe....



Mmmm...


The onions are looking and smelling heavenly...


This crust was "buy one--get one free"--it spoke to me also...I hear lots of small voices in the grocery store--just saying...


Place the crust on your pizza pan or stone...


Of course, drain the onions and blot them...In the left over butter, add the 3 cloves of chopped or pressed garlic and saute' a minute or so, careful not to burn...

Then pour this lovely sauce on the crust..


Put the onions on next...


Then the potatoes..


Next layer on the cheese...


Next layer of Mozzarella...


And the lovely shaved Parmesan I found...


This is terribly exciting!!

Bake about 12-15 minute on 425 degrees....

WOW!!


While it's baking, you're going to prepare the toppings...


Topping 1: Start with 1 cup sour cream...


Add 2 TBSP dry ranch dressing mix...


Add 2 TBSP Wing Sauce...


Add 2 TBSP whipping cream or milk...


Topping 2:  1/2 cup sour cream...


1 TBSP whipping cream or milk...


I just put them in baggies and snipped a corner off 
so I could easily put them on the pizza...


Decorating time!

TA DA!!!


It even looked pretty when I cut it!!


And on the plate!!  


And when we devoured it!

We decided that next time, we'd fry up some bacon, 
crumble and add to the top.   

Then we'd throw on some green onions--both before adding the creamy topping.  
Then you'd have a Loaded Potato Pizza--
and it would be simply amazing too!
