Slow Cooker Asian Beef & Vegetables

Here's a great quick and delicious meal to come home to.  
We love all kinds of stir fry and when you can toss it in the crockpot....well, that just makes it most wonderful!

Slow Cooker Asian Beef & Vegetables
 
1 lb steak cut into strips (I used sirloin)

1 TBSP cornstarch

1 tsp olive oil

4 green onions, chopped

3 cloves garlic, minced

2 cups fresh broccoli

1 large bell pepper or some small colorful peppers

8 oz fresh baby bella mushrooms

1/2 cup soy sauce

1/2 cup water

Place the meat in a zip lock bag, add the cornstarch. 

Give the bag a good shake to evenly coat --
the cornstarch is what will lightly thicken the sauce as it cooks.

Add the meat and all other ingredients to the slow cooker.  
Set on  low and cook 6 hours.   

Serve over noodles or jasmine rice.

Slice the steak like this...


Add it to the ziploc bag along with the cornstarch...

Place it in the crockpot...


Add the mushrooms...

and pour them in...

The soy sauce and water...


Beautiful!  
Put the cover on and cook about 6 hours on low...

We served it over Jasmine Rice--Our favorite :)
