Chicken Bacon Ranch Pizza

We had such a great time at Chuck E Cheese 
with the grand-babies this week:)

They are quite the lights of my life!!

 Chuck E's pizza was good--
the company was better, of course!--
but more and more I'm loving creating quick, 
homemade pizzas for dinner.  

There's so many delicious combinations to experiment with, 
but this one below is  a keeper!

It's light and it's easy to put together after 
a long day away from home.

Chicken Bacon Ranch Pizza

1/4 cup ranch dressing

3/4 cup mozzarella cheese

3/4 cup shredded cheddar cheese 

1 cup roasted, diced chicken breast

1/2 cup bacon cooked and crumbled

1 tomato seeded and diced

2-3 green onions chopped

 1 unbaked pizza crust

Preheat oven to 500 degrees.

 Spread 2 TBSP olive oil on the top of the pizza crust.  

Next add the ranch dressing.  

Mix the cheeses together. 
 
Sprinkle 1/2 the cheese on the crust.  

Top with chicken, tomato and green onion.

Sprinkle with the remaining cheese last.

Put pizza on stone and cook 10-12 minutes.

You can make a large pizza, but I found 
these adorable little pizza crusts at Publix BOGO :)  

Can't pass that up!


Brush the oil to the edges....

 

 Add the ranch dressing on next...


 Spread it all over...


Mix the cheeses together...


Add 1/2 the cheese on next...



Add the diced chicken...

The tomatoes...


The green onions...

and the remaining cheese...

Bake at 500 degrees about 10-12 minutes...

Yum! 


Enjoy!   



Preheat the oven and a pizza stone to 500° F.  Allow the stone to heat for at least 30 minutes.  In the mean time, cut a round of parchment paper the size of your pizza stone.  (Alternatively, use a pizza peel.)  Sprinkle lightly with cornmeal or semolina flour.  Gently roll out the pizza dough into a large circle, leaving a thicker ring around the edge for the crust.
Spread the Ranch dressing in a thin layer evenly over the unbaked crust.  Sprinkle with shredded mozzarella.  Top with grilled chicken, tomato and green onions.  Sprinkle with shredded cheddar.  Once assembled, carefully transfer the parchment round and pizza to the preheated baking stone and return to the oven.  Bake for 10-12 minutes, or until the cheese is melted and browned.  Slice, serve, and enjoy!
