Chipotle Grilled Steak with Lime Butter


Run...and I do mean run...
to the store and purchase some delicious steak for this weekend!  

These were amazing! 

Chipotle Grilled Steak with Lime Butter




Spice Rub for the Steaks
1 1/2 tsp paprika
1 1/2 tsp cumin
1 1/2 tsp chipotle powder
3 - 4 thick, boneless steaks

Combine the paprika, cumin, and chipotle powder in a small bowl. 

Sprinkle the steaks with plenty of sea salt.  

Sprinkle the spice mixture over next and rub into the meat.


For the Lime Butter:
1/2 stick butter, softened
1 clove of garlic, minced or pressed
1/4 tsp finely grated zest from 1 lime
1 TBSP fresh lime juice


Combine the butter, garlic, lime zest and lime juice. 
Press into a mold lined with saran wrap 
and refrigerate if you want to be a little fancy!  
Or, mix and put the butter into a small bowl and refrigerate.

Later that day or the next...

Oil the grates of the grill 
(or grill pan--we used our George Foreman Grill )
 and preheat over high heat until smoking. 
Reduce heat to medium high and add steaks. 

Cook without moving until well-charred, about 4 minutes. 
Flip steaks and continue to cook until center of steaks 
 register 125°F on an instant-read thermometer for medium-rare, 135°F for medium, or 145°F for well done. 

Transfer to a platter and allow to rest for at least 5 minutes,
 adding the lime butter after a few minutes to melt.  

Slice the steaks and serve immediately.

so, we will have to start with this one...
sigh...

Salt the steaks well on each side...


Next, combine the seasonings for the steak 
and evenly distribute over each one....
on each side...


Use your hands to make sure it's rubbed into the steaks well....


Cover those babies and set the in the refrigerator 
all day till dinner time...




Next, we're gonna make the lime butter...



In your bowl, combine the soft butter and garlic...


Zest the lime over the bowl...


Cut the lime in half and squeeze the tablespoon of juice in next...


Mmmm...


Stir till well combined...


I'm going fancy today and have decided 
to mold the butter....
somedays I'm just like that...
fancy and all...
just saying...


Line the mold with saran wrap and place the butter mixture inside...


Mush it down...
yes, mush is a fancy word...
really...
Me and my fancy friends say it all the time :)


Secure the saran wrap and put it in the fridge by the steaks...
they can keep each other company all day....



As you run through the door at the end of your day...
they are waiting for you! 

I would have loved to have grilled them outside,  
but today, George Foreman is the man...
just saying...

Mom's pork chop snuck in the pic...
she doesn't like steak...
sigh...
she could not even be tempted by the lime butter...
she's not right...
sorry Momma...it's just in the steak department...
 


Grill them to your liking...


Get out your lime butter...
ahh...
precious...

Put a generous amount on your steak...
Look at it getting all melty and delicious!!
