St. Patrick's DayPistachio Pound Cake




Do you ever plan and dream about an event
and it's all just so perfect in your head...
but when it comes to pass...
it's a totally different movie that's playing out before your eyes??

Me too!!  That's how it was last weekend...
I had Friday off and had not been able 
to have the grand-babies spend the night in a while.   

So, Super-Grandma had these grand plans...
Amy, Noah and I would shop for a while that morning, 
then we'd play ...

Noah cooked for a while...


 Drove his truck and ate some veggie straws...



and I would pick up Kaia from school.  

That all went reasonably well except for Noah decided that Friday would be declared "No Nap for Noah Day" and poor Kaia had 
a painful rash on her hands when I picked her up

I had also planned that we'd cook a fun dinner---
A cherry 7-Up float that contained a skewer of cherries, 
a skewer that held a tiny hamburger, 
and another that contained a tiny hotdog--
a drink that contained dinner too!  

Granny and I sat the kids at the bar and 
proceeded to cook the meal.  
We used meatballs for the burgers and Kaia 
helped me make the tiny buns.  

Noah was somewhat tired and grumpy--
and when Grandma cooks, he wants Grandma to hold him.  
He does not want to miss even one second of each step...
just saying.  

So...instead of the beautiful movie 
and smiling children I had in my mind...

that's all he wants for dinner now...
go figure...
Grandma is right there with you Noah...
You and I could throw a couple of those jars back with ease
but I'm not sure Mommy and Daddy would agree...

Parents...rules and all...you know...sigh...
Just wait buddy...those rules only get worse from here...
just saying... 

Poor Kaia is trying to thread the cherries on the skewers 
and the juice re-inflames her rash....
so...
both kiddos are crying by now and I'm just trying 
to get everything in one drink so that Kaia 
might enjoy a little bit of it...

She's such a trooper and posed for this adorable picture for me....



Believe me...I had big plans of documenting each step of the tiny meal so I could share it with you...
not happening...
just saying...

So...we pretty much swallow one of the tiny burgers whole 
and then proceed to the tub to hose everyone down...

Whew...Noah and Grandma passed out 
pretty much soon after that...
and Kaia...being the responsible one, 
woke Grandma up and let me know 
it was time to turn off the TV and go to bed.  
She's amazing...

Yes, not what I envisioned, but I wouldn't 
trade one minute for the world--
they are the icing on my cupcake!!!

Sharing this so moist and delicious cake recipe 
for St. Patrick's Day with you today!  

The kids are coming over after church and 
I've prepared an Irish Feast!!  

Guinness Roast, Peas & Carrots, Mashed Potatoes&Gravy, Momma's Watergate Salad, Green Cream Cheese Ribbon Brownies, Sprite with Lemon Lime Kool-Aid Ice Cubes 
and this Pistachio Pound Cake--YUM!!

I promised this cake to Amy a year ago!!

So many recipes...so little time!!

I'll try to get the other recipes shared this week...
I hope you enjoy this one today. 


Pistachio Pound Cake

  1 package Duncan Hines Butter Cake mix 
1 (3.4 ounce) package instant pistachio pudding mix 
4 eggs 
1 1/2 cups milk
1 stick butter melted 
7 drops green food coloring
1 tsp almond flavoring

Combine all ingredients in your mixing bowl.  
Mix till smooth.  Pour into a greased and floured bundt pan.  
Bake 45-55 minutes at 325 degrees.  
Check for doneness with a toothpick or skewer.  
Let cool in pan on cooling rack 10 minutes 
before turning out onto serving plate.  
I always turn mine a second time because I like the green-side up!

The delicious ingredients...



In your mixing bowl, combine the cake mix, eggs...



pistachio pudding...


milk...


melted butter...


almond flavoring...


and about 5 drops or so of green food coloring...if you desire...


Pour your batter into a greased and floured bundt pan...
and bake at 325 degrees 45-55 minutes...
check with a toothpick or skewer for doneness...


So pretty!  I let it cool in the pan about 10 minutes and then turned it out onto a plate and turned it over again so that this side was up...only because I think it's the prettiest side :)




Then I decided a little green glaze might be in order...
I whisked together 1/2 cup confectioners sugar, 1/2 tsp almond extract and 2 TBSP of milk...



 and a few drops of green food coloring...



 Whisk it up...



Pour it over the warm cake...


 Green gorgeousness!!
