Hawaiian Wedding Cake




Ok, I still have "Tropical Island" sickness...
just saying...




I've moved from Cozumel from yesterday's post 
to Hawaii today!  
 
In two years, I have plans to visit Hawaii ...cannot wait!




I will NOT be doing this...
it really freaks me out just to look at the picture...




I plan to do a lot of this though...this does not freak me out...

I know...
I've always been pretty adventurous...
just saying...




I'm going to try my best to do this...

This is somewhere between my 
hammock side and my surfing side :)




But until then, I will just bake Hawaiian goodies to enjoy!  
My friends at work really enjoyed the cupcakes 
I made from this recipe...
the icing was my favorite....:)
I don't think I've ever made icing with granulated sugar before, 
but it was absolutely magical!  
I will definitely save it to try with other desserts.

Hawaiian Wedding Cake
1 cup white sugar
1/2 cup brown sugar
1 tsp baking soda
2 cups cake flour

3 eggs 
1 (20 ounce) can crushed pineapple with juice
1 cup finely chopped walnuts
3/4 cup flaked coconut
1 tsp cinnamon
1/8 tsp nutmeg
1 tsp salt
1 tsp vanilla

Mix all of your dry ingredients together in a bowl.
Then mix in the eggs, vanilla 
and crushed pineapple with all of the juice.

Pour into a well greased pan 9″ round or 9″X13″pan...
(I made cupcakes for work today :)

Bake for about 35 – 40 minutes at 350 degrees 
(or until toothpick in the center comes out clean). 
For my cupcakes, I baked them 20 minutes.

 Whipped Cream Cream Cheese Frosting 

1 (8 ounce) package cream cheese, at room temperature
 
1 cup sugar
1/8 tsp salt
1 tsp vanilla extract
1 1/2 cups heavy whipping cream

In a small bowl beat whipping cream 
until stiff peaks form; set aside.

In a large bowl combine cream cheese, sugar, salt and vanilla. 
Beat until smooth.

Gently fold the cream cheese mixture and whipped cream together.
I topped mine with a little toasted coconut.

The most delicious ingredients...


Mix your dry ingredients together...


Add the pineapple...


The eggs...


The walnuts...


The coconut...


Mix well...


I baked mine into cupcakes 20 minutes on 350 degrees...


While they're cooling...make the frosting...


Whip the cream until soft peaks form...


It will be pretty like this...


Scoop it into a bowl and set aside...


In your mixing bowl...add the cream cheese and sugar...


butter and vanilla...


whip until smooth and creamy...


Add the whipped cream and fold gently until combined...


Toast coconut to add to the top...


Frost and add the coconut...pretty!



And sooo yummy!!
