South of the Border Burgers & Mexican Coleslaw



 Dreaming of Cozumel today...





been there a couple of times and just can't get enough of the beautiful blue water and the warm ocean breezes...ahhh...



There's a Fat Tuesday right on the beach where 
we love to get drinks...




and  nachos...
 


 Yep...I'm really good at the vacation life....
just saying...


Well I can't get there today, but I'm trying 
to bring Mexico home for dinner.   

Try this twist on grilling these burgers for dinner tonight, topped with Lime Aioli and served with a side of Mexican Coleslaw.  

Momma and the sweet mechanic said 
they were the best burgers they'd ever had...:)

After dinner, find your hammock
and dream those island dreams...



South of the Border Burgers

1 lb beef, ground
1 (1 1/4 ounce) package taco seasoning mix
1 (4 ounce) can green chilies, chopped, drained
1 small onion, finely chopped

Mix ground beef, taco seasoning mix, 
green chilies, finely chopped onion. 

Shape into patties and grill.

Top with Lime Aioli, Shredded Mexican Cheese and Lettuce

The quick and easy burger ingredients...



Mix them all together...

  • I wanted to grill them outside...
  • alas...
  • rain prevented it...
  • so Mr. Foreman handled it for me :)

  • They smell soooo good....


    Get the buns and toppings ready...

    When burgers are done, I topped them with the shredded cheese so it could get all melty...


  • I buttered the buns...


    and toasted them...

    I topped the buns with the lime aioli...

  •  
    Added some lettuce and served with 
  • a side of the Mexican Coleslaw!

Lime Aioli

1 cup mayonnaise
Juice of 1 lime, about 2 tbsp
1 tsp grated lime rind
3 garlic cloves, pressed or finely minced
1 tsp sea salt
1/4 tsp black pepper

Mix all together and refrigerate 
until you're ready to put the burgers together.

Mexican Coleslaw
 1 package Slaw Mix 
1 can Mexicorn {drained} 
1 can black beans {drained} 
1/3 cup diced green onions 
1 cup diced tomatoes 
 1 small can sliced black olives 
 1/4 cup diced cilantro 

Combine all ingredients in large bowl.  
Toss with 3/4 cup Jalapeno Ranch Dressing (below).  
Garnish with cilantro.  

The delish coleslaw ingredients... 

 

Pour the shredded cabbage in a large bowl...

 

Add the corn and beans...

 

green onions and cilantro...



diced tomatoes...




Make the jalapeno dressing below and 
pour over the slaw and stir well.

Refrigerate until ready to serve. 



Jalapeno Ranch Dressing 


  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 2 jalapenos, stemmed and seeded
  • 2 cloves garlic
  • 1 green onion
  • 1 lime, juiced
  • 1 handful cilantro
  • salt and pepper to taste
  •  
  • Place everything in a food processor and puree. 
  • Pour over the coleslaw and stir well.

Throw everything in the processor...




Whirrr....





Pour over the slaw...




Yum!!!
