Jalapeno Popper Dip




If you want a phenomenal flavorful, cheesey, gooey dip--
this one's for you.  

It was most delicious!  

We served it with Fritos and Tostitos. 



Jalapeño Popper Dip

6-8 slices of bacon, diced and cooked crispy


2 8-oz packages of cream cheese, soft


1 cup of mayonnaise


4-6 jalapeno's, chop and remove the seeds 

unless you want your dip fiery hot. 



1 cup of cheddar cheese, shredded


1/2 cup of mozzarella cheese, shredded


1/4 cup diced green onion

Topping:

1 cup of crushed crackers ( I used Ritz)


1/2 cup Parmesan cheese


1/2 stick of butter, melted


Preheat oven to 350.

Combine all of the ingredients into a medium bowl. 

Stir well.

Transfer to an oven proof 8x8 dish. 


Combine the topping ingredients 

and sprinkle all over the top of the dip.

Bake the dip for 20-30 minutes or until bubbly.

Cook your bacon while you're getting your other ingredients ready...

my daughter, Jessica, taught me how 
to cook it in the oven last summer...

400 degrees for 20 minutes!  Love it!

In your bowl, add the cream cheese...


the mozzarella...
I found this little guy on sale...
he's all fancy and such...

You can use the shredded mozzarella if 
you don't want to be all fancy smancy like me...

it's ok...

just saying...


I chopped him up like this...


I added the shredded Mexican cheese...


the green onions and chopped jalapenos...


I stirred it up and added the crumbled bacon...


I put it in my baking dish...


Then I got my topping ingredients together...


I crushed the crackers and added the cheese...


I poured the melted butter on next...


I mixed it well and placed it over the dip...


I baked it 350 degrees for 20-30 minutes, until it was all bubbly...


Perfection!
