Lisa's Peanut Butter Oatmeal Cookies with Peanut Butter Marshmallow Cream Filling






Within the last couple of weeks, I posted the recipe I use 
for Old Fashion Oatmeal Cookies.  

What could be more wonderful than that, you say?  

Well, how about Peanut Butter Oatmeal Cookies 
with Peanut Butter Marshmallow Cream??  

Yes!!  

These were most wonderful and kind of reminded me of how the Peanut Butter Girl Scout Cookies of "yesterday" tasted :)



Lisa's Peanut Butter Oatmeal Cookies 
with 
Peanut Butter Marshmallow Cream Filling


1/2 cup Crisco butter flavor shortening

1/2 cup butter 


3/4 cup sugar 


1 cup brown sugar 


1 cup peanut butter 


2 eggs 


1 1/2 cups flour 


2 teaspoons baking soda 


1 teaspoon salt 


1 cup quick-cooking oats





 

In large bowl mix the butter, shortening, sugars and peanut butter.

Add eggs one at a time.

Blend flour, soda and salt then add to sugar mixture.

Then add oats.

Form into 1 1/2 inch balls and place on your baking sheet--
 no need to press with fork like usual 
as these cookies come out perfectly round.
Bake 350 degrees for 12 minutes. 

Cool on wire rack completely before filling with the cream.  

Filling:

8 oz Marshmallow Cream
1 cup peanut butter
Mix well and put into a pastry bag to fill the cookies.

The yummy ingredients...



Cream the shortening, butter and sugars...




It will become all wonderfully creamy-fied like so...



Add the flour...


Baking soda...




and the salt...



Throw in the oats and mix well...




You'll shape into balls and bake at 350 degrees 
for 12 minutes until lightly browned...

Cool on a wire rack while you are preparing the filling...






The details of preparing the filling are missing....
so...
in a bowl, mix the peanut butter with 
the marshmallow cream until smooth...

Easy enough...right??  :)


Start with the first two cookies like so...



I was too lazy at this point to find my pastry bags...
so...
a ziploc bag was my bestest friend...



I piped some onto one cookie...



and topped it with the other cookie...




Look at that yummy filling!!!


You'll soon end up with a wonderful pile of cookies like this!!!



But please be healthy and wash them down 
with a cold glass of milk :)
