Rhodes Rolls Breakfast Pizza

We always keep a bag of those wonderful Rhodes Rolls in the freezer--they're the best yeast rolls I've ever found!
This recipe uses them for a yummy crust
for a delicious breakfast pizza...
We used some leftover ham we had the night before,
but of course you could use bacon, sausage
or even just veggies of your choice :)

Rhodes Rolls Breakfast Pizza

6 Rhodes rolls, thawed
2 eggs
1/4 cup heavy cream
salt & pepper to taste
1/2 cup grated mozzarella cheese
1 cup grated cheddar cheese
1/2 cup chopped cooked ham
2 TBSP chopped green onions

Roll the rolls into 12 inch circle.
Place on pizza stone and poke several times with fork.
Bake 375 degrees for 5-10 minutes.
Combine eggs, cream, salt and pepper.
Add cheeses, ham and onions.  Spread over prebaked crust.
Bake 10-12 minutes.

 The ingredients...

I placed the rolls on my pizza stone, sprayed a piece of saran wrap
with cooking spray and placed over the rolls...

I sat them on the counter to thaw while were were sleeping :)

The next morning, I used a fork to poke holes in each roll...
roll it or mush it into a circle...
the only tip I have here is to try to
create an edge around the crust...
this will help the egg mixture stay on the crust...
we had some issues with ours...
sigh...

Then bake it for about 5 to 7 minutes...

Meanwhile, in a bowl, combine the eggs, milk,

cheese...

 green onions...

the ham...

and pour onto the crust...

Mmmm...

Bake the pizza for 10-12 minutes...

Cut into wedges and enjoy!
