Just a quick little recipe I wanted to add to my recipe blog....
1--because I love fresh summer squash...and
2--cause my Momma was making this
when I walked into the kitchen :)
3--because I'm still moving slow from my surgery last week--
so my cooking skills aren't up to par yet ;)

She washes and cuts up the squash and onions...
She pours them in her roasting pan...
She said, "Then I just cut up a stick of butter over the top
and add some salt and pepper."
Butter...bless her! :)
She roasts them on 350 degrees for about 35-40 minutes--
giving them a couple of stirs during the cooking process.
They end up so very delicious like this!
For my healthy daughter Jessica, and anyone else
horrified over the stick of butter...
you can toss them with a bit of olive oil instead
before roasting...they do turn out tasty as well :)
