Key Lime Cheesecake Cake




I'm thinking of my Key Lime Cheesecake Cake as 
the last "hurrah" of summer...
It's my sister, Kathy's yummy cake recipe with 
my cheesecake layer in the middle...
Absolutely delightful :)





 

Key Lime Cheesecake Cake

 4 sticks of butter, softened or room temperature
1/2 cup orange juice
6 eggs
1 box lemon supreme cake mix
1 box lime jello


Combine all the ingredients and mix well.  
Pour the batter into 2 9 inch cake pans greased and floured.  
I always line mine with parchment paper circles.  

Bake the 2 layers at 350 degrees for 20-25 minutes or 
until a toothpick comes clean when the cake is tested. 

Let cool completely on a baking rack before frosting the cake.

Combine all the cake ingredients and mix well...

the cake mix, the orange juice, the jello...

Cool completely before assembling.

Cheesecake Layer

2--8 oz cream cheese, at room temperature
1 1/2 cups sugar
2 eggs
1/3 cup heavy cream
1 tsp vanilla

Cream the cream cheese, sugar and eggs 
until smooth and creamy.  
Add the heavy cream and vanilla and blend well.  
Pour into 9 inch springform pan--
 (I line the bottom of mine with parchment paper).
Bake 350 degrees 45 minutes until center is set.  
Run knife around the outside but 
leave in pan until completely cool.  
It's best if you refrigerate this layer 
overnight before assembling the cake.

The Lime Cream Cheese Icing

1 cup (2 sticks) unsalted butter , firm but not cold 
2 blocks of 8 oz cream cheese, room temperature
3 1/2 cups confectioners sugar
1 tsp vanilla
1 TBSP key lime juice
1 TBSP key lime zest

With your mixer, cream the butter and 
cream cheese until light and fluffy.  
Add the confectioners sugar and combine well.  
Add the remaining ingredients and blend. 

Frost the bottom layer.  
Add the cream cheese layer and add frosting on top.  
Place the next cake layer on top and frost the top 
and sides with the remaining frosting.  
Add some lime zest to the top of the cake for color.  
Refrigerate a couple of hours or overnight.

Add the cream cheese...



and the butter and combine until light and fluffy...



add the confectioners sugar, the lime juice, vanilla and zest...



Frost the bottom cake layer and then add the cheesecake layer...
Add frosting to the top of that layer...



You'll add the top layer and frost the top and sides...
Place some zest on top and maybe 
a twisted lime to wow your guests!
