Cheesy Fresh Spinach Dip

    My Momma loves finger foods and dips, 

    so for her birthday party this weekend, 

    I made this recipe that I knew she would enjoy....

    we hope you do to!

    Cheesy Fresh Spinach Dip

     1 medium onion, diced

    2 garlic cloves, minced or pressed

    2 lbs fresh baby spinach

    1/4 cup chicken stock

    1/2 cup heavy cream

    8 oz cream cheese

    2 TBSP Worcestershire sauce

    1 cup grated Mozzarella

    1 cup sour cream

     

     Preheat oven to 425 degrees.  

    In a large pan, heat a couple of TBSP olive oil.  

    Add chopped onion and garlic; 

    cook until softened about 5 minutes.

    Add the fresh spinach in 2 additions along with 

    a portion of the stock and cover with a lid.  

    Let the first portion wilt before  adding the next. 

    Repeat with the 2nd batch.   

    When spinach is thoroughly wilted, transfer to a colander 

    and drain; pressing to release all excess liquid. 

     In the same pan, add the cream cheese, spinach, 

    1/2 cup mozzarella cheese, Worcestershire and heavy cream.  

    Heat on low until the cheese is all melted.  Stir until combined. 

    Stir in the cup of sour cream.

    Season with salt and pepper to taste.  

    Pour into baking dish sprayed with non-stick spray.  

    Add the remaining 1/2 cup mozzarella cheese.  

    Bake until bubbly and golden brown, 20 to 25 minutes.  

    Serve with tortilla chips, crackers of your choice 

    or toasted bread.

    The beginning of a great party...


    Saute' the onions and garlic...




    For about 5 minutes...



    Add 1/2 the spinach and 1/2 the stock...



    Put the lid over the spinach so that it can wilt...




    When it's wilted, repeat with the remaining spinach and stock...


    When wilted, pour into a colander and press to drain...




    In your pan, add the cream cheese...



    the spinach, 1/2 cup mozzarella cheese, 
    the heavy cream and Worcestershire...



    When the cheese is all melted add 1 cup of sour cream...
    Add some salt and pepper to taste...




    Pour into your sprayed pan...



    Bake at 425 degrees for 20-25 minutes...

    Enjoy with dipping accompaniment of your choice!
