Ruth's Chris Sweet Potato Casserole
I love sweet potatoes just about any way you can fix them.
This was a delicious casserole we tried this holiday season
that is served at Ruth's Chris Steakhouse.
It was delicious and one of the easiest I have ever put together!
Topping:
1 cup brown sugar
1/3 cup flour
1 cup pecans
1/4 cup butter, melted
Sweet Potato Mixture:
3 cups mashed sweet potatoes, fresh baked or canned
1 cup sugar
1/2 tsp salt
1 tsp vanilla
2 eggs, beaten well
1/2 cup butter, melted
Combine brown sugar, flour, nuts and butter in a bowl; set aside.
Preheat oven to 350 degrees.
Combine potatoes, sugar, salt, vanilla, eggs
and butter in a mixing bowl; mix thoroughly.

Pour mixture into 9 x 13 baking dish.
Sprinkle the surface evenly with the crust mixture.
Pour the melted butter over the crust mixture.

Bake for 30 minutes. Allow to set for 15 minutes before serving.

Let sit 15 minutes before serving...
the topping will have a wonderful crusty glazed texture
with creamy sweet potatoes underneath...yum!
