Shredded Pork Soft Tacos

I really hate car problems..well..come to think of it..
I don't know anyone who enjoys them!  

A couple of weeks ago, I had picked up Kaia and the Cavalier started making an awful scraping noise.  

The ever voice of reason, my 3 year old granddaughter said, "Grandma, we need to stop and turn the 
car over and see what's wrong."  :)

"Oh, if it were that easy, my sweet child," Grandma replied.  

Well, oddly enough,  when my awesomely wonderful mechanic checked it out, he found a rusty wrench that had fallen down through the engine and was making the 
"I think the engine is going to fall out at any moment noise."

If that wasn't enough car problems for the month for 
"the princess" to deal with, the Cavalier then 
started running hot...
sigh...

Again the awesomely wonderful mechanic worked on it 
and sent me off to work stating, 
"Just keep your eye on the temperature and if it gets past a certain point, just call me, don't keep driving it."  

Halfway to work, an awful roaring noise begins....
sigh again...

Temperature gauge just fine..

Roaring noise gets worse and now car starts shaking....

Temperature still fine...

Car shaking violently and car feeling like it's going to fall apart...

Temperature steady...

notice I'm doing as I was told and 
keeping an eye on the temperature...

Burning smell ensues next...
great I'm going to burst into flames 
in my tiny car...

I pull over and call the mechanic,  
"The car is running awful...it is shaking crazily...
I can't go over 40 MPH, there is now a burning smell, 
but the temperature gauge is just where it's supposed to be!!!

"Well, it sounds like a flat tire to me," he says.  
"Can you look out your left window and see if the back tire is flat?"

"No!  I would have to crawl over everything in the other seat, 
my work bag, my lunch and stuff! 
I could get out of the car but I'm barely off the busy road!  
Do you want me to get out of the car on this busy road???"  

All the while, I'm thinking, 
"Doesn't he know what an awful stressful emergency this is...
I'm hot...I'm already having to crunch on my 
glass of ice I have for work....
I may have to start eating on my lunch next...
men...really...!!!

Silence and small sigh from mechanic, 
and then in a calm,soothing voice he says, 
"Well, princess, the left window is on YOUR side.  
Can you just sit where you are and look out THAT window 
and tell me if your back tire is flat?"

Oh....why didn't he put it that way in the first place...

I then look out my window...
"Yes, the back tire is pretty shredded."

"Thought so.  Just keep crunching on your ice and 
I'll be there in a few minutes."  

"Did, I mention that I NEVER took my eye off 
the temperature gauge?"  

"Yes, you did good."  

Sometimes it's really hard to be a princess...
and the care and feeding of one requires a lot of patience!!
Sometimes, I think maybe it's my cooking that's my saving grace! 

Today I'm sharing a wonderful pork roast recipe that we cooked and shredded to make soft tacos with homemade salsa!  
It was amazing!  Hope you enjoy it as much as we did.  


Shredded Pork Soft Tacos


Pork Roast 4-5 lbs
1 can Dr. Pepper (I only had Dr. Wham--so that's ok too)
1 can beer (I used Miller Lite)
I can Chipotle Peppers in Adobo sauce
1/2 cup brown sugar






Place that lovely roast in your crock pot.




Next pour the can of peppers over the roast...next time I think I'm going to blend them up to make a smooth sauce...




Pour Dr. Pepper over next...



Then add the beer...




Look at that happy roast just soaking in that deliciousness :)

Next add the 1/2 cup brown sugar---forgot to take that picture in the excitement of anticipating the dinner that was to come!!




Cook the roast on low for 6-8 hours.  
Doesn't this look amazing!!  

You just wait....



I shredded it next and returned it to the sauce 
to soak up more flavor. 




We put in on tortillas, added sour cream cheese, 
tomatoes and homemade salsa.  
It is a keeper!

    What can you replace the chipotle peppers with if you can't do spicy?
