7-Up Grilled Chicken & &-Up Biscuits

Eat More Cake

(Birthday Cake That Is!)
June 13th was my beautiful daughter Jessica's 25th birthday.  

She and Kaia spent some fun time at Granny's making cupcakes with shark sprinkles, fish sprinkles, and turtle sprinkles.
They were yummy!  


I think Kaia had 3 just to make sure.  
Someone has to be in charge of quality control...right?
 
Kaia also informed Jessica that she had bought her 
"three ridiculous balloons for her birthday and a card" :) 
She's a hoot!  
 Well this week I'm sharing my 7-UP recipes I tried this week.  When I got on the 7-UP kick, I just continued!!  
We had 7-UP Marinated Grilled Chicken, 
7-UP Biscuits and a 7-UP Poundcake!
They were all sooo very delish!!  

7-Up Grilled Chicken
6 chicken breasts
1/2 cup vegetable oil
12 oz 7-Up
1/2 cup soy sauce
1/4 cup Italian dressing

 Combine oil, 7-UP, soy sauce and Italian dressing.  
Place chicken breasts in large ziploc bag.  
Pour 7-Up marinade over chicken.  
Let marinate anywhere from 4 hours until 
overnight in the refrigerator.  
Grill chicken until done and enjoy! 


First, mix up that lovely marinade.  
In bowl, combine 7-Up...


soy sauce...


vegetable oil...


and the Italian dressing.



Place chicken breasts in large ziploc bag and 
pour marinade over the chicken.  

The longer you marinate the better...

I only had a couple of hours worth of wait in me today  :)


Drain the chicken and head to the grill.  


Looking promising...



Perfection!!! 


Since there were still more of the cute little cans of 7-Up...
the saga continued with a recipe for some of 
the most yummy biscuits I've ever tasted!

I love making biscuits from scratch using self-rising flour, butter, oil, buttermilk (you know, basic Southern staples)...but I was so surprised at how easy and how tasty these biscuits were.  

Try them...you won't be disappointed! 

7-Up Biscuits

1/2 cup 7-Up
1/2 cup sour cream
2 cups Bisquick
1/4 cup butter, melted

Start with Bisquick in mixing bowl.  Add sour cream.  
Use pastry cutter to combine.  
Add 7-Up and stir until the dough is all combined.  
Melt 1/4 cup butter in pan that you're going to cook biscuits in.  Roll out biscuit dough on surface sprinkled with flour.  
Pat it into a rectangle about 1/2 in thick.  Cut into squares.  
Place in pan with melted butter.  
Bake 450 degrees about 12 minutes until golden brown.  





Pour the Bisquick into mixing bowl. 


Add the sour cream...


Using a pastry cutter, combine the two...


Pour in the 7-Up and stir until dough is ..well..doughy..:)



Sprinkle surface with flour and turn dough out...


I patted mine into a very "rustic" rectangle...

Meanwhile, I melted the butter in the skillet...


I used a pizza cutter to cut the dough into squares...


The buttery skillet is just waiting for you to add the dough!  


Wow! 

Bake 450 degrees for about 10-12 minutes.  
After removing from the oven, I also brushed the tops with a little melted butter for good measure...and also 
because you can never have too much butter!  :)



See how delicious dinner was?  7-Up Grilled Chicken, 7-Up Biscuits, steamed broccoli and rice...ahhh!  It was heaven.  



What could be better?  
Well, finishing up the meal with a piece of 
7-Up Pound Cake of course!!  
7-Up Pound Cake
3 cups cake flour
4 eggs
1/2 cup butter
1/2 cup butter flavor Crisco
2 cups sugar
1 tsp vanilla extract
1 tsp lemon extract
7 oz 7-up
Cream butter and Crisco.  
Add sugar and combine until light and fluffy.  
Add the eggs one at a time and beat well. 
Alternately add flour and 7-Up mixing until combined.  
Add the lemon and vanilla extracts.  
Pour into greased and floured bundt pan.  
Bake 325 degrees for 70 minutes.  



Mix the butter and butter flavor Crisco.  
Add the sugar, beating until light and fluffy. 


Add the eggs, one at a time...

 Mix well...


 Alternately add the cake flour



 and the 7-Up...



 Next add the lemon extract..



 and the vanilla.





Get out your favorite Bundt pan and generously grease 
and flour it...or cheat like me and use Pam Baking Spray...:)




Pour that delicious batter in pan and yes, yes, yes, please lick the beaters...hurry before the children wants some too...after all, you're the one who has been slaving in the kitchen all day...honestly!!  


Ok, get hold of yourself, 
wipe the batter off your face 
and get that cake in the oven!  


Bake 325 degrees for 70 minutes.  


Another 7-Up success!
