This pie was such a favorite of everyone!
And the sweet lady that always showed up
with it at dinners was our favorite too :)
Aunt Shirley was always cooking up something good...
my memory that stands out the most is going into her kitchen and always seeing butter and eggs sitting on the counter...
they're just waiting for her to make
something fantastic with them!
A few years ago, she passed away in that kitchen
where she spent countless hours cooking for her family and friends...it was her favorite place in her house and mine too!
There was nothing like coming in the kitchen door,
sitting down at her kitchen table and seeing her
dance around the kitchen making wonderful food
and hearing her laugh.

Aunt Shirley's Hawaiian Luau Pie
1 large can crushed pineapple, not drained
3 TBSP cake flour
1/2 c sugar
2 large bananas
1/2 cup chopped walnuts
1 cup coconut
1-- 16 oz cool whip
Marachino cherries for garnish
1 Pillsbury pie crust, baked
Combine
pineapple, sugar and cake flour in saucepan
and cook until thick. Set
aside to cool.
Slice bananas into the pie crusts. Top with 1/4 cup nuts.
Add pineapple mixture over the nuts.
Mix coconut with cool whip and
spread over the pies.
Garnish with remaining 1/4 cup nuts and maraschino cherries.

Place the pie crust in the pie pan of your choice...
Prick it with a fork and bake according to directions on package...
set aside to cool completely...
In a saucepan, add the crushed pineapple, cake flour and the sugar...
Cook over medium heat until thick and gooey...
Be careful not to burn...
When thick, pour in a bowl and set aside or
place in the refrigerator to cool completely...
Slice the bananas and place in the pie crust...
I brushed mine with a little lemon juice
to keep them fresh looking...
Pour 1/4 cup of nuts over the bananas...
Looking good!!
Pour the cooled pineapple mixture over next...
Spread it to the edges...
Mix the cool whip and the coconut together...
I took my little cookie scoop and scooped it in little fluffy balls over the top of the pie...
You don't have to do it this way...
