My sister-in-law Naomi, shared this recipe on Facebook the other day, and when I saw it, I knew I had to try it this week!
If you love home made chicken and dumplings,
you will adore this casserole.
It was truly wonderful and had that soft ,
"I'm gonna hug you" dumpling texture :)
I also thought it would make a delicious chicken pot pie
by adding some peas and carrots.
You could also turn it into chicken divan by adding
some cooked broccoli and cheddar cheese---Yum!
Looks like we're gonna have to experiment--
I'll let you know how it turns out!

Chicken and Dumpling Casserole
The secret of this is not to stir anything. That's what makes your dumplings. When you dish it out, you have your dumplings on top.
2 chicken breasts, cooked and shredded

( I use a store bought rotisserie chicken)
2 cups chicken broth
1/2 stick of butter
2 cups Bisquick
2 cups whole milk
1 can cream of chicken soup
1 teaspoon Morton's Nature Seasoning
Directions: Preheat oven to 350 degrees.
Layer 1 - In 9 x 13 casserole dish, melt 1/2 stick of butter.
Spread
shredded chicken over butter.
Sprinkle Morton's Nature Seasoning over
this layer.
Do not stir.
Layer 2 - In small bowl, mix milk and Bisquick.

Slowly pour all over chicken. Do not stir.
Layer 3 - In medium bowl, whisk together

2 cups of chicken broth and soup.
Once blended, slowly pour over the Bisquick
layer. Do not Stir.
Bake casserole for 30-40 minutes, or until the top is golden brown

The easy peasy ingredients...

Meanwhile, debone the chicken...
you could also roast your own if you wish..
I had about 2 1/2 cups when I finished...
When the butter is melted...
add the shredded chicken...
sprinkle with the Morton's Nature Seasoning...
or salt and pepper...
In a bowl, add the 2 cups of Bisquick...
and your 2 cups of milk...
Stir well...
Pour this mixture over the chicken---don't stir...
It already looks very promising....:)
In a separate bowl, add 2 cups of chicken broth...
and the can of Cream of Chicken Soup...
Yes, this can of soup was missing from
the picture of the "easy peasy ingredients"...
I'm not sure why it was missing because I texted that sweet man all the ingredients I needed from the store today....
I did not want to stop after work...sigh...
I thought I made it easy for him...
after all, I called him and told him...
I texted him...
I talked to him 3 or 4 times
while he was scouring the aisles of Walmart...hmmm...
When I was gathering the ingredients to put the casserole together
I asked, "Where is the cream of chicken?"....
you know, the look of horror was next...
followed by him exiting the kitchen
and heading back to the store...
yeah...
But the great ending to the story is
what he brought back the second time...
Yes, plenty of soup and an "I'm really sorry"
industrial size bag of Reese's Peanut Butter Eggs...
He knows my weakness :)
Anyway, stir the chicken soup up with the chicken stock...
Pour over the Bisquick mixture...don't stir...:)
Yum!!!
Bake at 350 degrees for 40-50 minutes...
Look at this!!! Just hot and bubbly and simply wonderful!
