4th of July Angelfood Cake Roll




In preparation for the holiday festivities this week, 
I wanted to share this delicious and easy cake roll.  
You can make it a day or so before and put it in the refrigerator and it will be ready for your cookout! 




4th of July Angel Food Cake Roll


1 Box Duncan Hines Angel Food Cake Mix
1 small White Chocolate Instant Pudding 
8 oz Cool Whip
1 cup milk
1 cup sliced strawberries
1 cup blueberries
1/2 cup confectioners sugar

Mix cake mix according to package directions.  
I line my jelly roll pan with parchment paper.  
Pour the cake mix into the jelly roll pan and bake on 
350 degrees about 15-18 minutes until cake tests done.  

Cool on rack about 5 minutes.  
Lift cake out by the parchment paper and set on counter.  
Place a clean, large, kitchen towel on the counter and sprinkle 
the 1/2 cup confectioners sugar over the towel.  

Turn the cake over onto the towel and 
pull the parchment paper off.  
Slowly roll up the towel and then set 
the cake aside to cool completely.

In mixing bowl, beat the pudding and milk till smooth.  
Stir in the cool whip.

When cake is cool, unroll.  
Spread with pudding mixture and top with the berries. 

Carefully roll up the cake and refrigerate a few hours or overnight.  

Slice and enjoy!

Mix the cake mix according the the directions on the box...
Pour into your parchment lined jelly roll pan...


It will look maaavelouuuus like so...


Bake on 350 degrees for about 15-18 minutes...


Sprinkle your kitchen towel with the confectioners sugar 
and turn the cake out onto the towel...


Slowly roll up the towel with the cake...


Set it aside like this to cool completely....


Meanwhile, mix the pudding and the milk 
and whisk in the cool whip...

 Unroll the cake...


Spread on the pudding mixture...


Top with the berries and carefully roll up again while carefully pulling the cake away from the towel...


When you're done, it will be most perfectly gorgeous like this!


Slice and enjoy!

It was wonderful as well! 



I won tickets to a Brad Paisley concert 
this past month and was so very excited! 

The only "downer" the story was that it would be an 
outside concert in Alabama in June...
y'all know how I am about the heat...
and "glistening"...
and whining...

Anyway, the sweet man of my life had been given one of 
the new "cooling towels" that seem to be all the rage right now.  

He decided it would probably be a great idea 
to get me one also...he's pretty brilliant!  

Well, he did pick up one for me...
it wasn't the same brand as the one that he had, 
but there could not be many differences 
to this wonder towel right??
