This is my daughter-in-law, Amy's recipe for that delicious
corn casserole that makes it's rounds for the holidays.
A couple of years ago, she started making my
corn casserole recipe that has sour cream in it.
Well...one time...she forgot the sour cream and made it anyway...
we all agree it tastes even better than the original!
Amy's Corn Casserole
1 can cream corn
1 can whole kernal corn, drained
1 stick butter, melted
1 pkg Jiffy Corn Muffin Mix
2 eggs
In a large bowl, combine the corn, stick of melted butter, Jiffy Mix and 2 eggs. Mix well with a spoon. Pour into a 8 x 8 pan sprayed with nonstick spray. Bake at 400 degrees 35-45 minutes.

For starters...
Empty the corn in a large bowl...
and pour the melted butter in next...
Add the box of Jiffy Mix...
Add the eggs...
Mix it well and pour it in your baking dish...
Mmmm....bake 400 degrees 35-45 minutes.
Delicious during the holidays or at any time of the year!
