Fried Pies and Fireflies Grilled Chicken Fajitas


 
 
 I have been cooking my fajitas this way for years 
and they are my family's favorite! 
The hardest part is waiting the 24 hours for 
the chicken to marinate--but it's worth it!! :)

 Fried Pies and Fireflies Grilled Chicken Fajitas

2 lbs boneless chicken tenders
1/2 cup olive oil
1/2 cup fresh lime juice
3 cloves garlic, minced or pressed
1 TBSP cumin
1 TBSP chili powder
3 jalapeno peppers, seeded and chopped small
1/2 cup fresh cilantro, chopped

Place the chicken in a gallon ziploc bag.  
In a chopper or food processor, 
combine the remaining ingredients and puree until blended.  
Pour over the chicken and marinate in the refrigerator overnight.  The next day, drain the liquid and grill until chicken is done.  
Cut into small pieces and keep warm.  

Prepare the onions and peppers:
2 onions, sliced
Peppers--1 green, 1 orange, 1 yellow, 1 red
1 stick of butter and 3 TBSP olive oil for sauteing the veggies

Slice the onions and the peppers.  
Heat the butter and oil and add the vegetables.  
Stir fry until they are done to your liking.

Serve the chicken, peppers and onions on warmed tortillas with shredded cheese, salsa, sour cream, shredded lettuce, olives, etc.

Put your chicken in a ziploc bag...


 In a large bowl, combine the marinade ingredients...
lime, oil...



  garlic...


the cumin, the chili powder, 


chop and seed those 3 jalapenos and the cilantro 
waiting behind the bowl of marinade...


 Pour the marinade over the chicken and add the chopped jalapenos and cilantro to the ziploc bag...



Turn it over and over to get the chicken 
covered with all the good stuff....

You'll refrigerate the chicken overnight

 
 The next day you'll grill the chicken to utter perfection like this...


 You'll cut up the peppers and onions and saute'...



I was taking this dish to work so 
I put the peppers in the crock pot...



I sliced up the chicken and added it to the peppers...


Fix them up with all the toppings of your choice and enjoy!
