We love stuffed peppers and we always use Spanish Rice for the stuffing...so... to make it even easier we've turned it into a casserole! It was so very scrumptious!
Stuffed Pepper Casserole
- 1 lb pound ground beef
- 2 small green peppers or 1 large, coarsely chopped
- salt to taste
- 3 garlic cloves, minced
- 1 pkg Spanish Rice, cooked
- 1 1/2 C mozzarella cheese, divided
- 1 1/2 cup Mexican cheese, divided
Preheat oven to 350 degrees.
Cook meat, onions and minced garlic in frying pan; drain.
Cook the Spanish Rice per package directions
and add the chopped peppers.
After the rice is done (about 15 minutes),
stir in the meat and onion mixture.
Add 1/2 cup each of the cheese. Stir until combined.
Add remaining cheese on top.
Place a piece of foil lightly over the casserole
but do not press onto the cheese.
Bake for 25 minutes or until the cheese is all melted.
Let sit 5 minutes before serving.

Cook the ground beef with the onions and minced garlic...drain...

While you're cooking that wonderful Spanish rice
according to the directions on the box...
make yourself busy by chopping your peppers...:)

Add them to the Spanish rice mixture and cook about 15 minutes...
