Momma's Cabbage & Sausage with Fried Pies & Fireflies Fried Cornbread





There are a few things I didn't like until I turned 40--
and cabbage was one of them--weird right?  
Anyway, now I could possibly eat this every night.  
There's nothing like my Mom's fried cabbage with little cocktail sausages and my fried cornbread to round out the meal--
absolutely delish! 



All you need is a cabbage, a package of cocktail sausage and a little olive oil and a bit of water...

I use a cutting board when I prepare this dish...:)



The cabbage is in the pan....



Even though the sausages are already tiny, 
Mom sometimes cuts them in half...
I think because she still likes to show off her knife skills...


Now, add about 3 TBSP or so of olive oil 
and  about 1/4 cup water...


Put the lid on your pan and let the cabbage 
cook and steam a while on medium low...
stirring and turning every few minutes...
then turn them down to low and let them cook thoroughly 
for about 30 minutes or so...


They will be looking awesomely delicious like this in no time...



While they're cooking, you'll want to prepare 
your cornbread mix to fry...


Fried Pies & Fireflies Fried Cornbread

1/2 cup self-rising flour
1/2 cup self-rising cornmeal, I use Aunt Jemima's
2 eggs
1 tablespoon sugar
1/2 cup buttermilk
1/4 cup  water
1/4 cup vegetable oil or bacon grease
Oil for frying

Mix all together and stir until combined. 
 Heat your oil over medium high heat 
until its hot enough for frying.  
Drop the cornbread mixture a few tablespoons at a time,
 turning once when they brown on one side.  
Drain them on a rack on on paper towels. 




Mix the dry ingredients, eggs, buttermilk...


Stir until all combined...


Drop by tablespoonfuls into the hot grease...


Turn carefully when they are brown on the bottom...


Pretty!


A beautiful platter of fried cornbread!  
It doesn't get more wonderfully Southern than this!  
Enjoy with your cabbage and sausage!
