Breakfast Ham & Cheese Tortilla Bake

 


This breakfast dish is most delicious-- 
filled with ham, veggies and melted cheese!  
A wonderful and easy recipe to put together quick or make ahead the night before for family and friends :)

Breakfast Ham & Cheese Tortilla Bake

2 cups chopped, cooked ham
 1 cup chopped bell pepper, multiple colors if you have them
1/2 cup sliced green onions
2 cups shredded cheddar or Mexican cheese
6-8 small flour tortillas
6 eggs
1 1/2 cups heavy whipping cream
1 TBSP all purpose flour
1/2 tsp salt
1/2 tsp pepper


Lightly spray 8×8 baking dish with cooking spray.

In frying pan, saute' ham, bell pepper, 
green onions and tomatoes with 2 TBSP butter, 
until mixture is heated thoroughly. 

Place 1/3 cup of the ham mixture down the center of each tortilla and sprinkle some cheese on each; 
Roll up and place seam side down in baking dish.

In a large bowl, beat eggs, whipping cream, flour and salt. 
Pour over the tortillas. 
Sprinkle the remaining 1 cup cheese over top.
 
Cover; then bake 350 degrees 40-45 minutes. 

Uncover; bake 10 minutes longer or until set and cheese is melted.

You can also assemble and  refrigerate overnight 
for a make-ahead breakfast/brunch. 


The delicious ingredients...


Chop your ham, tomatoes, peppers & green onion...

Saute' them in 2 TBSP butter until mixture is heated thoroughly...


Top each tortilla with the ham mixture and then sprinkle some cheese on next...


Roll up each tortilla and place seam side down in your 8x8 pan...


In your mixing bowl, combine the eggs...


The whipping cream...


Flour, salt & pepper...


Whisk till smooth and pour over the tortillas...


Top with the remaining cheese...
and maybe some more for good measure :)

Cover loosely and bake 40 minutes...

Uncover and bake 10 minutes more...

It will look splendid like this!  Yum!


Cut and serve...Enjoy!


On a side note: 

I've been researching gluten free recipes 
and foods this week.  
It has been interesting and a definite experiment 
in tastes and textures! 

I called that handsome man yesterday and asked,

"Did you find the bag of Pirate's Booty" I left you?
--the gluten free snack... "

"Yes.." he replied, tentatively.  

"How did you like it?" I inquired.

"Well, it was different...and the name is weird"...he stated.

"Yes", I replied, "I tasted the first one and thought it tasted like one of those packing peanuts...
same texture also...
with dried powdered seaweed as the flavoring,"  
I matter of factly stated.  

Like I have ever eaten packing peanuts 
with powdered seaweed flavoring....

"But the next 30 or so of them kinda grew on me...."

"Yes, I felt the same way," he agreed...
"and I finished off the entire bag."  

"Should we buy it again?" I asked.

"No," he said.  "I feel that gluten must be 
the ingredient in food that makes it taste good."  :)

After this week, I may have to agree!
