I bought this box of Zatarain's Caribbean Rice Mix a while back just knowing I'd come up with something to fix with it :)
One night last week when I got home late,
I pulled out the fresh veggies I had bought at Publix,
grabbed some chicken breasts I had grilled the night before,
the soy sauce, some pineapple juice and the Caribbean rice...
Oh boy! It turned out most fabulous!
Chicken Stir Fry with Caribbean Rice
Ingredients I used:
Asparagus
Snow Peas
Stir Fry Mix
Fajita Mix
1/2 cup soy sauce
1/2 cup pineapple juice
Zatarain's Caribbean Rice
Olive Oil
Grilled chicken breasts, diced, about 1 1/2 cups
In your stir-fry pan, heat about 1/4 cup olive oil.
Add the veggies and stir a bit on high.
Reduce the heat to medium and let cook about 5 minutes or so. Add the pineapple juice and soy sauce.
Add the diced chicken next.
Stir well, reduce the heat, place a lid on
and cook for about 15 minutes.
Meanwhile, prepare the rice as directed on the package.
Serve the stir fry over the rice.

Heat the oil and add the fajita mix...
And the veggie stir fry next...
Throw in the snow peas and chopped asparagus...
Add the pineapple juice and the soy sauce...
And last, the diced chicken...
You can judge the time you let it cook depending on
if you like your veggies crunchy or more done like me :)
