I have a new wonderful friend at work
who loves to cook like I do!!
We even love the same desserts--
German Chocolate Cake, pecan pie, anything coconut!
I told her we must must must be twins!!
I'm honored to be asked to make the cupcakes for her daughter's upcoming wedding in October.
There will be different kinds but Joyce wants to make sure German Chocolate is on the menu--
or just the gooey icing and a spoon she says!
And if you've ever been a mother of a bride...
this may be just what she'll need on the wedding day :)
Well, I found this recipe and it kind of mirrors that
German Chocolate icing that we love--
I can't wait for her to try them!
2½ cups sugar
½ cup evaporated milk
½ cup corn syrup
½ cup butter
1 teaspoon vanilla
2-2½ cups chopped pecans
2½ cups grated coconut
Set pecans, coconut, and vanilla aside.
½ cup evaporated milk

Set pecans, coconut, and vanilla aside.
Mix sugar, evaporated milk, corn syrup,
and butter in large saucepan.
Bring to a rolling boil & boil for 3 minutes.

Remove from heat & add pecans, coconut, and vanilla.
Stir for about 4 minutes.
Take a spoonful of batter and place on wax paper.
Let it sit until batter has hardened.
Remove from paper and enjoy.

Let it all melt together and bring to a boil...
turn down the heat so it won't burn...
but still bubbly...
let boil for 3 minutes...
Remove from the heat and add the vanilla...
the pecans and coconut...
and stir for 4 minutes..
sigh...
this is when it's good to have an assistant in the kitchen with you...
today I do not..
we will push through anyway... :)
Now, use a scoop or spoon to plop the goodies onto wax paper...
