Pecan Pie Cobbler

My most favorite pie is Pecan Pie--
I love the ooey, gooey center and the
delicious roasted pecan taste!

This is a delightful new twist of turning the classic pie into
this wonderful cobbler to share with friends and family!

Pecan Pie Cobbler

2 1/2 cups light corn syrup
2 1/2 cups granulated sugar
1/3 cup butter, melted
1 tablespoon vanilla extract
5 eggs, slightly beaten
3 cups pecans, coarsely chopped

Preheat oven to 350º.

Spray a 13 X 9 inch pan with cooking spray.
Take your 2 pie crusts and lay in the 13x9 pan.
Press the seams together and make a fluted edge.

In large bowl, mix together the syrup, sugar,
butter, vanilla and eggs until very well combined.

Add pecans to the remaining filling mixture.

Bake for approximately 50 minutes or until the center begins to set.

Remove from oven and let cool for about 20 minutes.

Serve warm or at room temperature.
