Well, you know the sweet fella loves Oatmeal Cookies...
toffee ...and...I had a 1/2 jar of Biscoff Spread...
Oh, my! These cookies turned out most delicious!

Lisa's Biscoff Toffee Oatmeal Cookies
1 1/2 cups old fashioned oats
2/3 cup all-purpose flour
2/3 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup butter, at room temperature
1/2 cup Biscoff Spread
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract
1 bag toffee bits
Preheat oven to 350 degrees.
In your mixing bowl, combine the butter,
Biscoff spread, sugar and brown sugar.
Beat on medium speed until smooth and creamy.
Add the egg and vanilla; mix in well.
Add the remaining dry ingredients and combine until blended.
Chill the dough 30 minutes--this is essential so that
the cookies do not bake too thin.
Drop by teaspoonfuls onto your cookie sheets 2 inches apart.
Bake 12-15 minutes or until brown around the edges.
Let stand on cookie sheet 5 minutes
before removing to a cooling rack with your spatula.
Again, essential so that the cookies retain their perfect shape!

The delicious ingredients...
Cream together the butter, the Biscoff Spread and the sugars...
Add the egg and vanilla and blend until creamy...
Next add all the dry ingredients...
I mixed it with my dough hook until it was well combined...
Next remember to chill the dough for about 30 minutes
so that they will hold their shape during cooking...
I plopped it with my scoop on my baking sheets...
Look at how pretty they've turned out!
Let them sit on the baking sheet for 5 minutes
before removing them to cool on a rack...
Now you have a platter of happiness to share :)
