Lisa's Pumpkin Poundcake

     Lisa's Pumpkin Poundcake


    1-15oz can solid pack pumpkin

    3/4 c sugar

    3/4 c brown sugar

    1 stick butter, room temperature

    4 large eggs, room temperature

    1 tsp vanilla

    3 cups cake flour

    1 1/2 tsp pumpkin pie spice

    1 tsp baking powder

    1/2 tsp baking soda

    1/2 tsp salt

    3/4 cup buttermilk

    1 cup chopped pecans

    Glaze:

    1/3 cup buttermilk

    1/4 cup sugar

    2 TBSP butter

    2 tsp cornstarch

    1/8 tsp baking soda

    Preheat oven to 350 degrees.
    Coat your 10 inch tube pan with cooking spray.   

    In your mixing bowl, combine sugar, 
    brown sugar and stick of butter.  
    Beat 3 minutes until well blended.  
    Add the eggs, one at a time, beating well.  
    Blend in pumpkin and vanilla.  

    In another bowl, combine the remaining 
    dry ingredients and whisk together.  
    Add this flour mixture alternately with the buttermilk to the pumpkin batter; beginning and ending with flour mixture.  

    Spoon batter into prepared pan.  
    Sprinkle the chopped pecans over the top.  

    Bake at 350 degrees for 55 minutes until done.  
    Cool in pan 10 minutes on wire rack.  
    Remove from pan and cool completely.  

    Prepare the glaze:

    In your saucepan, combine all the glaze ingredients; bring to a boil.  Reduce heat and cook 1 minute until thick, stirring constantly.  Remove from heat.  Drizzle the cake with glaze.

    The delicious ingredients...


    Combine the sugar, 
    brown sugar and stick of butter...beat 3 minutes...

    Then add the eggs, one at a time, beating well...

     

    Whisk the dry ingredients together in a bowl...


    Take turns adding it with the buttermilk...
    beginning and ending with the flour mixture...


    This is my glass of buttermilk I drink 
    whenever I get to cook with it...

    My children hate this part...

    I can't help it...I loooovvvveeee buttermilk!!
    It's crazy..I know...
     Anyway...


    Pour the batter in your tube pan that has been 
    generously sprayed with nonstick spray...
     and sprinkle on the pecans...

    Maybe I was distracted by my glass of buttermilk...sorry!!

    While the cake is baking, you can prepare the glaze...

    The yummy glaze ingredients...


    Add them all to your saucepan...


    Let the mixture boil and reduce the heat...
    stirring constantly for 1 minute...


    Your glaze should like thick and shiny like this!
     

    Just look at this yummy cake that I just pulled out of the oven...

     

     Cool as directed and remove from baking pan...
    Top with the yummy glaze...


     Enjoy!
