Caramel Cream Cheese Brownies


This picture just says it all, doesn't it!  
These were just incredible!  
The brownie batter was simply amazing by itself and I believe 
it will be my new foundation for brownies here on out :)
Whatever you do this week...run..gather all the ingredients 
and bake these amazing chocolate wonders! 








Caramel Cream Cheese Brownies

1 cup butter
8  1oz squares unsweetened chocolate
3 1/4 cups sugar, divided
6 large eggs
1 TBSP vanilla
8 oz cream cheese
1 cup caramel ice cream topping

Preheat oven to 350 degrees.  
Line your 9 x 13 pan with parchment paper.  

In a small saucepan, combine the butter and chocolate.  

Cook over medium low heat stirring frequently 
until chocolate is melted and mixture is smooth.  
Remove from heat and let cool slightly. 

In your mixing bowl, beat the 3 cups of sugar, 5 eggs 
and vanilla at medium high speed for 6 minutes.  
Reduce speed and add flour, beating until combined.  
Mix in the melted chocolate.  

Reserve 1 cup of the batter and pour 
the remaining batter into the 9 x 13 pan.  

In small bowl, beat the cream cheese, 
1/4 cup sugar and 1 egg until smooth.  
Drop by heaping spoonfuls over the batter.  

Drizzle with the caramel topping.  
Drop the reserved 1 cup of chocolate batter over caramel.  

Using a knife, swirl the batters together.  
Bake at 350 degrees for 45 minutes.  
Let cool completely before cutting.

The delicious ingredients...


 


Start by melting the chocolate...
I didn't have the squares, so I used the ratio of 
3 TBSP cocoa + 1 TBSP oil = 1 square of chocolate




Add the butter...




While that deliciousness is melting...Let's start on the batter...

Add the eggs and vanilla...


add the flour...




Beat well and it will be wonderfully creamy 
and most beautiful like this!



Add the chocolate to the batter and mix well...

And set aside 1 cup of the batter to use later...

I always line my pan with parchment paper so that 
I don't have to clean up a messy brownie aftermath...

I can also just lift it out of the pan after it cooks and let it cool...
and that just makes me happy inside :)




Drop the cream cheese batter like huge pillows 
all over the chocolate...




Squeeze with abandon the caramel ice cream topping...
it's ok..
really...
no one will judge you :)




Next plop the 1 cup of  saved brownie batter over the top...


Use a knife to make beautiful swirls....



Bake at 350 degrees for 45 minutes...
Cool completely, cut and enjoy!
